| I don't know the recipe for the ones pictured here but these are the recipes for ones I have made. I can't remember where I found the original recipes but I think they were here. I just tweaked them to my taste. Mincemeat Couscous Cake 8 syns for the whole cake if you count the cous ous as free or 28 syns if you syn it.
4oz couscous 3 eggs
4 tablespoons sweetener
2 teaspoons of mixed spice 1 teaspoon ground nutmeg 1 teaspoon cinnamon
4 tablespoons mincemeat
juice from 1 lemon
Heat the oven to 180 Soak the couscous in boiling water (normally use double the height of couscous) add the sweetener, mixed spice, nutmeg, cinnamon and lemon juice with the water, stir and wait for it to soak in. Add the mincemeat Whisk the eggs then add them too and mix well. Pour into a greased loaf tin and bake for 40 mins Lemon couscous cake Free on green and Extra Easy (20 syns if you syn the couscous)
4oz Couscous
2 eggs
3 lemons - juice and rind
5 tablespoons granulated sweetener (splenda or canderel)
1 tub quark
1 teaspoon baking powder
Cover couscous in boiling water - cover and leave to stand for approx 5 mins then fluff with fork.
Beat together all remaining ingredients and add the mixture to the couscous
Pour into a cake tin and bake in a preheated oven (approx 180˚) for 45 minutes or until firm |
