    carrots

    I am starting Atkins from today. I have some carrots that I need to use up. Can I eat them if I keep within 20g of carbs. Ordered book just waiting for it to arrive.

    If you want to do things absolutely by the book, then no, I'm afraid carrots aren't acceptable.

    Starchy root vegetables are removed from your diet at the beginning of Induction and are reintroduced towards the end of the programme in Phase 3 (pre-maintenance), and then only in small quantities. In the case of carrots, this is because they can spike insulin levels in susceptible individuals, not because they are high in carbs per se.

    I feel your pain, carrots are my main source of snacking whilst at work. Or should I say was my main source. I'm off to look at some old threads for snacking ideas.
