Broccoli and stilton soup, don't knock it until you've tried it ;-)

This is a really thick and creamy soup, even surprised myself how nice it is!

300g broccoli (stalk and all)
3 small spring onions finely chopped
Half a small clove of garlic
1tsp thyme
50g stilton
Water
Salt and pepper to taste
olive oil

Sautee onion and garlic in a decent amount of oil for a couple minutes, add broccoli (cut into small pieces) and thyme and cook for another minute or 2.

Add just enough water to cover the broccoli and simmer until broccoli is tender. Crumble stilton in and stir for a minute. Blitz the soup with a hand blender and add salt and pepper.

HI Sam.

The soup makes 2 big portions, and is has 4g of carbs per serving (8g of carbs for the whole recipe) x
