Low calorie, zero fat ratatoillie

I pretty much eat this a few times a week, as a base filler for loads of meals.

I use passata add a cube of frozen garlic, one beef oxo cube, mixed herbs and all the vegetables I fancy like onion, peppers, mushrooms, courgettes, spinach etc and pop it all in raw, let it boil up for 10 minutes, then simmer for a good hour.

You can also add spices if you prefer it with a kick.

You can put it on pasta, rice, on it's own as a side dish. You can add steamed or boiled fish, boiled or roasted chicken, a can of tuna.
