There's a knack to mousse. First of all, you need ice cold water (put it in the freezer for 20-30 mins before you start). Then it helps to mix the scoopful of mix-a-mousse into the shake packet. Finally, you need to use a good handheld electric blender (a 600W one works best) when you add the powder to the water (hand whisking is probably never going to work well) and blend blend blend for at least a minute.
Then pour the gloop into a bowl, pop it into the freezer for 5 minutes and voila, perfect mousse!
