Cauliflower rice?

I've searched through the recipe thread but can't find this so would anyone mind explaining how to do cauliflower rice for me please? Thank you.
Oh, and, is it nice/taste vaguely like the real thing or shall I stick to 'slim rice' shirataki stuff?
 
It's fine and I use shirttail as well. Just blast some cauliflower in the microwave for 1 min or so, allow to stand for a minute or so, then mash with a fork. Sounds weird but it's really ok. Have to say I prefer the shirataki but it makes a change. Fx
 
Or you can grate it first :)
 
I've never done this either... you grate it raw? (I usually just mash up leftover cooked cauli with a fork...).
 
You can grate it raw but it makes a mess lol

The best recipe that I have made with cauliflower is a Mock Fried Rice - has fooled people in the past!
1. Cut up your raw cauliflower
2. Blitz in food processor in batches
3. Put all the bits in a clean kitchen cloth and squeeze to get rid of moisture - I don't always do this as sometimes the mix already feels quite dry
4. Cut up spring onion, chilli and garlic ready
5. Get a frying pan heated really hot - hopefully you have a good non stick one that you don't need to use any oil with
6. Add all ingredients except the cauliflower and dryfry for a minute.
7. Now add the cauliflower and dryfry this for a couple of minutes.
8. Make a well and crack a few eggs in (I usually use 2 per whole cauliflower).
9. Start mixing this all together like a fried rice making sure you get any bits that might be stuck to the bottom of the pan
10. Add a few slugs of soy sauce (and herbs if you want) and enjoy!!

I have tried variations of the Cauli Rice and never got it to work! Going to try this next week and will let you know how it goes - thank you!

I actually had it last night again with some beef, was really nice and a good meal to fill myself up on without feeling guilty.

I'm still doing well with my diet thanks. On a PP day today and have spinning so hoping for a good result on the scales tomorrow!

Let me know how you find the cauliflower rice!
