    * weight crept up to 58/59kg
    * got down to 56.4kg in September
    * back up to 59kg by end of year
    2014
    * back at pre-dukan weight and time for an intermittent fasting intervention!

    30/6: 58.3kg
    14/7: 57.6kg
    4/8: 56.5kg
    currently hovering around 57kg and pretty happy with my weight, but plan to continue IF for another month or 2 at least.

    This thread was a lifesaver to me last year, so I'm giving it a bump. Lady M, are you still around?

    I don't know if I can contribute any recipes as I'm more of a 'throw a few things together and see what happens' kind of person, but I'd love to share ideas with the gang. These are mostly pp as I think those are the ones most of us struggle with.

    Old faves & standards
    salt and pepper chicken
    beef burgers
    spicy tofu and ham
    seafood soup
    quiche

    New faves & experiments:
    shirataki bolognese
    spicy tuna w/ konjac rice

    Desserts:
    frozen yoghurt / dukan ice cream
    lemon & lime mousse
    vanilla custard

    That's all I can think of for now, but I'm sure there are lots more out there!

    Chicken stir-fry with eggplant and basil

    Dietitian's tip:

    This colorful main dish requires a fair amount of chopping, but the cooking takes only minutes. Wait to cut up the eggplant until just before cooking to prevent discoloration.


    Ingredients

    • 1/4 cup coarsely chopped fresh basil
    • 2 tablespoons chopped fresh mint
    • 3/4 cup low-sodium chicken stock or broth
    • 3 green (spring) onions, including tender green tops, 2 coarsely chopped and 1 thinly sliced
    • 2 cloves garlic
    • 1 tablespoon peeled and chopped fresh ginger
    • 2 tablespoons extra-virgin olive oil
    • 1 small eggplant, with peel, diced (about 4 cups)
    • 1 yellow onion, coarsely chopped (about 1/2 cup)
    • 1 red bell pepper, seeded and cut into julienne
    • 1 yellow bell pepper, seeded and cut into julienne
    • 1 pound skinless, boneless chicken breasts, cut into strips 1/2 inch wide and 2 inches long
