◄ Chocolate Orange Duffins (Muffins) ►

When I say I am making muffins my daughter gets excited until she discovers they are dukan style muffins so we have taken to calling them duffins instead. :D

Anyway, I was experimenting yesterday and found found that these chocolate orange duffins came out quite well, they are very moreish.

Not for everyone though as I believe even low fat cocoa is a tolerated item.

I found that using homemade strained slow cooker yoghurt gives a better texture as it is quite thick.

6 tbs oatbran
2 eggs
5 tbs yoghurt (plain pref greek style)
1 tsp orange extract (Sainsburys Valencian Orange)
2 tbs canderel
3 tsp low fat cocoa powder
1/2 tsp baking powder

Just mix everything together, pour into muffin mould/cases bake for 12 to 15 mins at 170 degrees.

I use the small muffin size silicone tray which makes 12 muffins so as I am on stab I can have 6 per day, otherwise they make 6 normal sized muffins.

I usually use 3 tbs of canderel when making duffins but as I use 3 tsps of cocoa I cut this down to 2.

I can highly recommend the Sainsburys Orange extract, it does not smell or taste synthetic, smells fantastic and is £1.09 a 38 ml bottle.

It just smells like freshly peeled oranges.

I sometimes also add a tbs of wheat bran for extra roughage but add a bit of extra yoghurt so it isn't too thick.

As you can see there is quite a bit of cocoa powder in this so you would have to adjust this depending on your stage of the diet.

Love the recipe - I think I tried the Sainsbury's orange essence and then discovered that it was made with orange oil???? So threw it in the bin!!! Now got one that has no oil so will try it! Did debate with myself whether such a small amount of flavouring could be damaging! LOL

I have just amended the recipe to show that the Sainsburys Orange is extract and not essence.

I did see that a lot of flavourings contain oil but as you normally only use either half or teaspoon I am not worried about it.
 
Your Dukan muffins ( duffins) sound delicious.
I tried bran pancake with cranberry extract this morning and it was... excellent!
 
No, these are not suitable for Attack. Cocoa powder is a tolerated item and can only be had from cruise onwards. For Cruise this recipe will use 3 days worth of your oatbran allowance too.
 
I made these for lunch today in the rayburn so had to wing it a bit with the cooking timings and temp, I swapped 2 tbsp oatbran for wheatbran & removed a tsp of cocoa so that it was 2 days worth on cruise... I got 6 medium size muffins out the mix and they were lovely and didnt sink as much as my toffee muffins usually do :D will defo be experimenting with diff flavours of these ones as i was getting worried about the amount of eggs & skimmed milk powder in the other recipe lol

That is what I found, they don't sink and are firmer and less eggy than the other recipe.

I bought some banana flavouring and use that with the cocoa powder, they are lovely.
 
i may make carrot cake ones tommorrow LOL
 
mixed spice i find goes well with carrot ones
