when attempting to make muffins tonight, I ended up with something much better than I've managed before! Tasted more like a croissant than anything I've ever made! I used 1 egg, 1 egg white, 2 and 1/2 tbsp of total 0%, 2 1/2 tbsp sweetener, 2tbsp oatbran and about 1/4tbsp baking powder. cooked at 140 for 22mins in a fan oven, and i love them! That made 4 (in cupcake cases cause I'd planned muffins!)
 
Funnily enough, croissants are exactly what the airport security check people thought they were when my OH took some with him on a trip off island recently! He was just relieved they didn't confiscate them!

I've been using a extra egg White in my regular muffin mix as I find it makes them lighter and less dense.
 
Definitely lighter. I thought that was the use of an electric whisk-love it! And I loved that it makes 4!
