I just tried this recipe I found on another site. It has definite potential. Didn't hold up to well as a hamburger bun but I think it'd work for tuna or chicken salad. This made 6 naanish-sized flatbreads

3 eggs, separated
85g ff cream cheese/quark/greek yoghurt
sprinkle of sweetener
pinch of salt
1/8 tsp cream of tartar

Preheat oven to 150C.
Beat egg whites with cream of tartar until very, very stiff. In another bowl beat cold cream cheese until smooth, then beat in yolks, sweetener and salt until smooth. Carefully fold in egg whites, you don't want to lose any air.
Scoop into mounds on large baking sheet lined with baking paper, shape with your spoon. Bake about 30 min or until dark golden brown and crispy. Cool on wire rack. Store in airtight container.

Now, that's the recipe and these are my thoughts after making my first batch: I took them out at 28 minutes because they were starting to look as though they'd burn any second. They were hard to the touch but became soggyish after cooling. My hamburger soaked clean through. I put them in a zipper bag overnight and they are now very soft. But, I popped 2 in the toaster and that help immensely so I'm sure they'd hold up as sandwich cladding. And would defo add some spice and/or herbs next time.

All in all, I'm sure I'll be making these again :)
 
these sounds like the oopsie rolls someone else posted the other day. can't wait to try them. I wonder if letting them cool in the oven like meringues would keep them crisper.
 
This is great!

I tried using a portobello mushroom as a 'burger bun' this week, which failed because:-

a. I hate mushrooms
b. Became too soggy once my burger elements were added (and I hate soggy 'bread')


Will give this a go tonight and use a chicken fillet instead of beef...yum!

I think you're right, it seems that name figured somewhere on the website I got the recipe from. Oops, didn't know someone had already posted it!
Would that be with the oven door cracked a bit? Because mine has a tendency to develop steam if I leave food in to cool.

BUT, here's another recipe that's pretty edible:

tofu bread

125g tofu
2 whole eggs
1 egg white
dollop ff cream cheese/fromage frais
1 tsp baking powder
1 pkt yeast (7g)
salt & herbs (or sweetener if you're going for sweet)

Beat egg whites until stiff. Whip remaining ingredients into a smooth batter (this may take a few minutes with a whisk attachment, faster if you use stick blender but harder to clean cuz it sticks) then fold in whites. Microwave on high 8 minutes, then grill for a few minutes longer. Or, if like me you don't have a new fangled microwave with grill element, whack into preheated oven to brown it up.

Once I went too long on the nuking time and it came out hard-ish, but it still worked quite nicely for salad croutons! I nicked this from a local dukan forum and the original recipe had the baking powder plus 2 tbsp cornflour, so I replaced the cornflour w/yeast. I'm always on the lookout for some way to get a slice of *bread* without having to use my allowance of oatbran - that's reserved exclusively for muffins :D

Here's my attempt,

I took mine out once they were brown and them flipped them to crisp the other side.

They were nice and light and held my grilled chicken perfectly.

I personally would use them straight away, as they were nice and fluffy on the inside.

They remind me of Tiger Bread but a lot lighter in texture.
 
I made the oopsie rolls the other day and had some with my salmon and prawns today, very nice. Could see these becoming too addictive. I think I'd reduce the portions though because 6 eggs ended up being too much.
 
i think there is something else besides salt - spice too i will ask next time in tesco

Its brushed with Sesame oil, which when baking makes the top crack, hence the tiger strips and the lovely smell. Hmmmmm tiger bread :(
 
I know tiger bread is a paste they spread on the top.....I'm on it to find out whats in it!!!
 
Rice flour and sesame oil goes on top apparently :)
