Cruise PP Lemon curd

Mmmm so amazing


1/3rd cup of fresh lemon juice
rind of 1 lemon
1 egg
4 - 5 tbsps of sweetener

Warm the juice and rind in a pan.
Whisk the egg and sweetener in a bowl.
Once the juice is warm - slowly (Very) drizzle the juice into the egg whisking all the time. Do this slowly or you will get scrambled egg!
Whisk for 1 minute and then return to the pan.
Heat the mixture stirring all the time until it thickens and coats a wooden spoon.
Put in an airtight container and store in the fridge (if it makes it there!!)
 
hmmm yum. I guess the small amount on the bread or muffin wouldn't mean much in the way of fruit usage LOL, liking the idea. x
 
wonder how it would cook if i placed it in the centre of a muffin mmmmmmmmmmmmmmmmmmmmmmmm.:D
 
Could you not make a lemon meringue pie with it? :D
 
If I could master meringue id be all over it! It either burns or tastes like omelette! But yes u could xx


Never attempted it myself but, Dukan dessert is better than no dessert at all :)
 
I made some meringues the other week, first time ever I got the consistency of the whites right, but don't think I added enough sweetner, they were awfully plain and had turned golden in colour....think i left them in too long.

I found a simple recipe for meringue...if I find it again, I will post it :)

Yummy ! Had to make some, it would be rude not to give it a try. Also made some lemon muffins, roll on lunchtime ;)
