Chicken cakes
Toss the chicken, garlic, ginger, onion, coriander and chilli into a food processor and season well. Blitz until the chicken is finely ground and everything is well mixed. Use your hands to shape six small cakes.
Heat the frying pan, then fry the cakes over a medium heat for about 6-8 minutes, turning once. Serve hot, with sweet chilli sauce, lime wedges, coriander, shredded spring onion and red chilli.

mmmm, just had these for dinner, very nice indeed....
I used spring onions instead of onions and I didn't have corriander....
next time I do these I will make sure I have corriander, that, I'm sure, just makes the dish.... yummmy

had these tonight but dopey me forgot to put corriander in, no other alternate went in, had a spoonful of tin tomatoes and some scrambled egg with them. Very yum x
