When i saw this recipe I immediately thought "Dukan!". So i have adapted it and we aet it tonight and it was gorgeous!
Suitable for PV and all steps after! I have halved the amounts in the recipe and this was plenty for 2 of us
Ingredients
2 eggs
1 small onion
a few mushrooms
400grams very lean minced beef or turkey (i made it with turkey today)
1 small carton passata (or chopped tinned tomatoes if you dont have passata)
carton low fat cottage cheese
a few spoonfuls of very low fat cream cheese(optional)
half a packet of lean good quality ham
2-3 courgettes
small handul of reduced fat grated cheese (tolerated)
Method
Boil eggs and peel and slice and set aside. Spray a large frying pan with oil and fry the onion and mushrooms. Then add the mince and fry until mince changes colour making sure there are no lumps. Add thepassata and then cover with lid and cook for around 5 minutes. If theres not enough liquid add some water. There should be lots of liquid!
Peel the courgettes and slice lengthways into long strips as thin as you can make them. if they are too thick you might want to blanch them in some hot water first.
Take a deep dish and spoon the runny mince mixture into the bottom.Then arrange a layer of the courgette strips over it. Add another layer of sauce and then add a layer of ham slices and some of the sliced egg. Dot with some of the cream cheese if using or cottage cheese if not.
repeat with a later of courgette then mince then ham and eggs and cheese
Repeat until you run out of ingredients! i managed 3 layers. Pour any remaining sauce over the top and then spoon cottage cheese over that. if using the low fat grated cheese add this last.
Cover with foil and cook in oven gas 6 electric 200 for about an hour. Test to see if everything cooked. if not put back for another 15 minutes. Take out and leave to rest for around 20 minutes.
You can add other veg if you want and vary the amount of ham and eggs.
