Thread: Buffet dilemma

    Buffet dilemma

    On Saturday were having my lo's 2nd party (12 days early as baby due next Friday) we were going to have a BBQ but all week the weather has changed from light rain to heavy rain so were going to have to do a buffet but I don't want all boring cook from frozen buffet foods. So I'm after ideas that I can make, or at least adapt that will go down well. There will be about 14 adults and only 2 kids - unfortunately I don't know anyone with kids really.
    Ideally food that can be kept til next day etc if not all eaten.

    Not 'buffet food' as such but would jacket potatoes be a good indoor alternative? It's easy to fill an oven with them, you could make up a load of chilli to go with them and have cheese, beans, etc. for people to help themselves to, plus salad and a few other usual finger food/buffet bits and bobs to go alongside.

    Chicken and prawn skewers? You can do several batches in various flavours (teriyaki sweet chilli tandoori etc) and serve with lots of dips like homemade salsa raita tzatziki etc.

    Yuk sung with turkey mince and large lettuce leaves for rolling up is a good one. (turkey mince onion water chestnuts garlic ginger soy)

    A couscous salad full of crunchy peppers and chicken? Make it up with a punch of curry powder in the stock then stir some minted natural yoghurt through.

    Mini quiches (line a muffin tray with slices of ham then fill with veg and beaten egg. Bake till set)

    A huge vat of healthy chilli in a slow cooker and some baked potatoes or rice to serve.

    Most the people coming don't eat prawn - I only know this cos we've tried before but the skewer idea is great I never thought of that, defo going on my list. I think I'm going to do the jacket and chilli thing too. Great ideas thank you helps a lot x
