Salad the easy way
I just posted something in my diary that I think might deserve a wider audience.

I love a good salad but usually find that something goes slimy before I get to it. So my chickens or the composters tend to get overfed on expensive greens stuff.
But I found the above and was a bit stunned. I have glass jars, I make jams and chutneys. Now, it seems, I can buy all of those salad ingredients and they may well keep for a week in the fridge. So I am going shopping in a bit. I'll post the results over the next week. If it works we could all leap in and share our favourite salad mixes.

I have a couple of the big empty coffee jars in teh cupboard and am going to the hypermarket tonight so will see what they have, this is perfect for DH's lunch as well, especially if I can do them a few days in advance
I've just put 5 jars in the fridge.
Feta cheese (half fat), olives, chopped pepper, radish, cannellini beans and lettuce. Cucumber, tomatoes and a dressing to be added on the day. Grand total of about 220kcals.
Two don't have feta, so I will add tuna or chicken on my Up Days. I have a sprinkle of toasted seeds too. Maybe some nuts.
All I have to add is an apple or two and I am done for work lunches.
I'll let you know how it is by Friday!

We just had crispy duck, the leftovers will be eaten with Tuesday's salad :D

I am going to make 2 today and see how they are on Thursday, anything thats reduces my chopping time will be gratefully received, often I can't be bothered making a salad to this is a great idea
Mine have all been fine so far. Everything has been crisp and crunchy.... 2 to go.

Well that worked better than I expected!
The last salad was looked at yesterday, 6 days after I made it. Just the leaves and green beans, no feta. It was still OK, not as crispy as the Friday one was, but OK. So I think I could happily make salad in a glass jar 5 days in advance. That is great as it means I can make Mon, Weds and Friday salads on Sunday and then I am sorted for the week's lunches at work. If I make soup and pop 2 of those in the fridge for DD tea as well, then I have 2.5 DDs sorted for every week! That should help kick me back into full on DDing!!
Now I just need to work out some recipes for those Innocent Pots and I am sorted. I also have Hugh FWs home made Pot Noodle recipes to work through. So I should be able to make the transition into winter properly.
Tomorrow I shop for a bag of interesting leaves, or a single small crispy lettuce and some green beans. I already have tins of beans, butter, aduki, kidney etc and lots of tomatoes. I also have feta and mozarella cheese and some small tins of tuna. So I can ring the changes.
I'll raid the freezer for other veg, but I am thinking of carrot and sweet potato soup with a little bit of cumin etc. Recipe makes 6, so 2 for the week and 4 for the freezer.
