Heyyyy, so I thought I'd have a new diary, had a tough month with exams and whatnot *fingers crosses* no resits! Food over the last month has been paleo with only a couple of slip ups as I knew I needed to eat this way as much as possible to give myself a fighting chance to be healthy enough to survive the last few weeks of uni and I did and I have, survived that is! By the skin of my teeth I made it and to be honest at Easter I was unsure if I would even be able to go back to uni never mind sit exams, so despite the fact I picked up a viral infection in the 2nd week of the exams and *may* have fluffed my nutrition exam I am really chuffed that I got there :)

Once I have finished my NHS placement in June I will be incorporating some exercise, yoga/Pilates and some swimming, also going to try go for some walks as moving into a new flat at the start of July so will be exploring the area.

So yeah, exciting times, waiting with baited breath for exam results, cannot wait to go on placement!!!! real patients lol! eeeeeek!

so FOOOOOOD! I am doing nightshade free paleo (with occasional cheese ;)) and following the 80% -20% rule to keep me on track

I made a paleo pizza with a cauliflower crust on Thursday night for my sister and I, it was rather yummy, and I'll definitely do it again when I have the time as was a loooong process but was fun to do.

Friday: got weighed for the 1st time in a month and have maintained my weight at 9:10, so happy with that as I thought I'd gained

strawberries, tuna mush (tin tuna with mushrooms, small amount of cheese, melted and 2 poached eggs) sounds nasty but tastes gooooood!

lamb ribs with onions (one red, one white)

3 Thorntons cappuccino truffle chocolates... lush!

Welcome back! Great that you got through your exams (no mean feat in itself) AND maintained your weight as well, what a bonus.

Food is looking good; I need to try autoimmune paleo but I keep putting it off. I think just because it would be even more to think about! How are you finding? Does it seem to be making a difference? x

Hi! Thanks for popping in! :)
I'm doing Practical Paleo's ME protocol at the moment, I really dont know if I could do the autoimmune protocol and give up eggs and nuts as well as the nightshades! lol I think I'm going to put off trying it for a while, will be interesting if it does help but would require a *lot* of planning.
It was hard to begin with cutting out nightshades as all my meals seemed to revolve around tomatoes and peppers, and I love spicy food so having to cut out chilli flakes and paprika etc was a huge change to make and it has taken a bit of adapting but I am having less joint pain so worth it!

xx

I've been trying to eat within an 8 hour eating window for a few weeks now, I've found that if I eat my main meal at lunch time I'm not actually hungry for another meal, so where possible I have been doing this. Dont know if its having an effect on my weight but its easier for me to only have to prep 2 meals rather than 3.

Todays food:

Grapefruit

lamb ribs with onions - absolutely addicted to lamb ribs lol its just as well that they are so cheap!

NakD chocolate orange bar, plums

Got weighed today and have lost half a lb since Friday, won't be weighing in til after I've completed placement now.

Food for today:

Grapefruit

Courgette pancake with leftover lamb, mushrooms and roasted onions

Don't know what else is on the menu for today, having a girly shopping trip with a friend for dresses for the summer ball so there may be cocktails! Hopefully ;)

Am curious how the 8 hour eating window has affected your ME? I can manage it for one day every now and again but any more than that and I get quite tired and irritable. Food is looking tasty and how great to have lost some weight as well! :D

It doesn't seem to have had any adverse effects so far on energy levels, I don't manage it everyday as its not always practical, and i wont be able to do it for the next few weeks as working 9-5pm on placement will make it impossible. I do find my energy is more stable eating a big meal in the middle of the day but that is not always practical to do either lol
I don't think I could fast or anything though!

Didn't get a dress whilst shopping but decided to try on my Pull and Bear dress which didnt fit last time and it fits!!! Yay! So going to wear that for the ball. Have decided to go out in flats, I love my heels but they kill me and want to enjoy myself without sore feet! Wish I was taller lol! Had a soya decaf cappuccino from starbucks yesterday but didn't feel cracking after it.

I'm off to see Star Trek finallyyyy! Excited muchly, dont know if I'll take a snack, decisions!! before getting diagnosed with coeliac id get really bad stomach pains if i ate in situations where i was sat for a long period so I know I can go a few hours without dying of hunger ;) but lets face it eating in the cinema is not a necessity just yummy!

Grapefruit

Savory mince & cheese with jacketed sweet potato

apple, NakD bar

broth made from oxtail

Had a v sleepy day today, shopping yesterday really took it out of me and still got to go buy some smart clothes for placement, really wish they had uniforms, so much easier.

Star Trek was A-MAZ-INGGGGG!!! I decided to have a magnum at the cinema, had a magic lactase enzyme tablet so alls good! Was hungry for dinner when I got back- darn sugar- so had a gluten free cheese sandwich with my broth.

Having such a hungry day today

fried eggs and mushrooms

small apple

lamb ribs with onions, strawberries

satsumas, chicken wings

Had some yummy cherries, eaten a lot of fruit today but pleased that I didnt cave to my cravings and buy something chocolatey. Finally got some tops for placement, why are all the smart tops sheer and see through!?! Took ages to find some where you can't see my bra!

Going to dye my hair and hopefully go for a walk tomorrow, got a few bits to still sort for next week too, need to meal plan and get some cooking done for the freezer, really want to bake some paleo chocolate banana muffins and some savoury biscuit/scone type things I found online.

So my hairs not orange, score! Always a mystery what colour its going to turn out lol! Can't believe what a beautiful day it is here, fingers crossed its nice tomorrow for the ball :)

Food so far today:

Grapefruit and blueberries, cheese omelette

worlds smallest apple, I mean seriously tiny. Note to self: buy bigger apples!

*cough cough* not addicted or anything, lamb ribs again, with onions. In my defense irs a real cheap cut of meat and I am a pooooor student  also had some strawberries, I love summer!!

Dinner was savory mince with a sweet potatoe jacket, made 3 portions so will freeze one and have the other tomorrow.

Haven't got round to baking yet, its now kn tomorrow's to do list

Really need to get my ass into gear soon, trying to rest up for tonight but got so much to do too.

Had a grapefruit and an orange for breakfast. Id been buying red grapefruit but couldn't get any yesterday so bought a white one, surprisingly it was so much sweeter and cheaper to boot, I'm converted!

Going to have a portion of the mince from yesterday with a sweet potatoe. I also found some parmesan made from raw milk in Morrisons of all places, wasnt cheap but a nice find. So excited to have some of it on dinner!

I'm looking forward to getting all dressed up for the summer ball tonight, buying some peach schnapps and some sugar/sweetener free cranberry juice to take to my friends for predrinks (so grown up lol). Really don't fancy vodka today, its normally my spirit of choice, schnapps feels more summery anyways. Wish I was in Spain where its only a couple of euros a bottle!

Had an absolutely A-MA-ZINNNNG time at the uni summer ball last night!!! There was a free fairground, headphone disco (never been to one before, was wicked!), JLS (aaaaaargh) were performing, ot was fab! Walked home just after 5am, sooool glad I wore flats! Took my heels to my friend's for photos ;) and then ballet pumps. Beautiful morning, gonna be a cracking day if its anything to go by. Had some gluten free oatcakes with butter when I got in, don't think thats too bad really. Don't know how paleo I'll be today though, peach schnapps with cranberry is so yummy, ended up drinking vodka and orange whilst out. Had one diet coke blergh! Not drank it in about three months and won't be again anytime soon. Lots to get ready for placement tomorrow, really hoping last night won't affect my ME too much *fingers crossed* but really needed a good fun night out.

Awww my mum made me paleo chocolate muffins yesterday :D they are scrummy!

Got a ham hock acooking for lunches for the week and need to roast some veggies to go with it, times like this I wish I could eat peppers. Making the swirly quiche from Practical Paleo for weekday breakfasts and will cook some sausages to have cold. Foods going to ve really repetitive this week as super long days. Need to try get to Holland and Barratt today to get my gingerbread NakD bar fix!!!

Well todays eating has been off the wall, cant actually call any of it (apart from the paleo muffins) food really, just eaten rubbish, enjoyed it though!
Ended up meeting friends for dinner at Revolution, was lovely to sit and chill in the sun and surprisingly Revs are really good with gluten free options, they gave me an allergen booklet to look through so impressed with that! Have sorted food out for tomorrow and going to chill and have a very early night! Looking forward to placement but apprehensive at the same time.

What I've eaten today - back on eating properly tomorrow!

2 paleo choc muffins

mexican chicken nachos with fries

toffee popcorn, crunchie

geeez....

Monday:

swirly mini quiche & cold sausage

ham hock with roasted veg
paleo choc banana muffin

oatcakes with butter

lamb ribs with onions
cherries

Tuesday:

banana & fresh orange juice

ham hock and roasted veg
oatcakes

grapefruit, 2 paleo muffins (with buttet on)

swirly mini quiche and cold sausage

sweet potato & savory mince

Man, placement is hungry work lol! Absolutely exhausted tonight so early night methinks.

Cant believe I slept through from 7pm to 6:30am! Really needed it. Wasn't as warm on my walk to the train station this morning, not looking forward to Friday as need to get the 7:30am train instead of the 7:55! Booooooo!!!

Wednesday's food:

banana and fresh orange juice
oatcakes

lamb ribs with mushrooms and onions

paleo choc banana muffin
grapefruit

Going to just get some fruit for tea tonight and another early night

Thursdays plan:

banana (probably will buy some fresh orange again, seem to need this in a morning)

Made a chicken and veg salad (courgettes, carrot, mushroom and squash)
Need to think of something to take to have with this hmmmm.......

To be continued.....!
