MY MUSINGS

So, having lost 100lbs on Dukan then regained half of them and in the middle of losing them again (!) my DH and I have thought and researched and thought some more and decided that health-matters as well as weight-loss aims mean we should try a paleo way of life. Slowly, kids too. Having been low carb for a while don't think we shall find the beginning that hard, in fact fruit seems rather naughty as is not allowed at all on Dukan weight-loss phase. Will put up food for a while so I can keep track.

Yesterday:
Breakfast: A banana
Snacks: Nakd pecan bar
Lunch: Scrambled eggs & mushrooms (cooked in coconut oil), salad
Dinner: Slice of homemade flaxbread/Coconutmilk & raspberry smoothie (large!)

Today:
Breakfast: Slice of flax bread spread with coconut oil
Snacks: Strawberries & nakd pecan bar
Lunch: Chicken salad with mango/pear/leaves (yummy!)
Dinner: Vegetable chilli with cauliflower rice.

Today:
Breakfast: Slice of flax toast & local honey
Lunch: Tuna Salad
Dinner: Haddock, neep chips, grilled mushroom & roasted pepper
Snacks: Peach, homemade protein ball x 2 (ground almonds/dates/strawberries/coconut oil/coconut shreds)

The last couple of days I have had a background headache, wonder whether the increase in carbs has caused this? Drinking plenty of water to try and combat it. The protein balls I made earlier were a huge hit for everyone, I think DH and I are going to have to be very firm about restricting them to 1-2 a day as we do still want to lose weight and they are so delicious I could eat the entire plate-full! Busy day tomorrow, baking for a school event in the morning, going to the event in the afternoon, eldest daughter (adult) back from her holidays in the evening. Must remember to eat LOL.

Tomorrow:
Breakfast: Flax toast & scrambled eggs
Lunch: BLT
Dinner: Chicken stir-fry
Snacks: Protein Ball/Stewed rhubarb with honey

Well, baked 5 dozen muffins this morning, saw youngest daughter "graduate" from nursery this afternoon and have had a good gossip with eldest daughter before she goes jaunting off to Sweden in a couple of days. She just got her 1st year Law exam results in, 2 As & 2 Bs so is very happy. Have done the housework and am going to have an early night as couldn't sleep between 2.30am and 6am last night. Headache still here, have struggled with drinking enough today as have been so busy. Still really enjoying having fruit again but coconut milk in my tea is going to take some getting used to!

Tomorrow:
Breakfast - Flax toast, tea
Lunch - Egg salad
Dinner - Steak, neep chips, roasted peppers & spinach
Snacks - Strawberry smoothie/apple

Found a recipe for plantain scones with whipped coconut cream and blueberry jam which I can't wait to try out - my plantains aren't ripening very quickly though . Maybe if I put them next to some bananas it'll help?

So have been paleo for 5 days now...psychologically feeling great as I know we have been very healthy this week, still got background headache but not sleeping great/getting used to fruit sugars is the explanation I am sure. It'll pass. The kids love banana pancakes, these are clearly going to become a firm weekend favourite dessert! Just wish that baking with nuts in could be eaten at school but it can't so really need to get using coconut flour for their pack-ups. They are having wholemeal pittas for the rest of this term with lots of veg & fruit and I hope to learn how to make coconut tortillas over the summer holidays. They are also enjoying breakfast smoothies with fruit & ground almonds in - pretty speedy for during the week :).

Tomorrow:
Breakfast: Scrambled eggs
Lunch: Tuna salad (Romano lettuce/baby plum toms/cucumber/spring onions/pear/carrot)
Dinner: Coley stir fry
Snacks: Prune & goji berry protein balls/apple

These are great muffins - my kids live them

Oh yum, those muffins sound delicious - thanks for the recipe!

Was out all day as one of my daughters was in two regional competitions and she got a silver medal for one! She was so pleased and proud, have to admit I had a tear in my eye watching her. She sang, unaccompanied, beautifully. The national competition is in October and she can't wait. Came home to find my lovely DH had made dinner for us both he rushed out to work. Lovely not to have to cook and I am ignoring the piles of washing up - going to have a lazy evening and an early night.

Tomorrow's food (treats for DH as Father's Day):
Breakfast: Fried flax bread, fried egg, fried tomato & mushrooms, maybe bacon for DH as well
Lunch: Smoked salmon & salad
Dinner: Vegetable chilli & cauli rice (his favourite!), apple & blackberry crumble.

Well, the first week of paleo is over...I've definitely enjoyed it and apart from trying to get used to coconut milk in my tea haven't found it hard. I think DH and I need to keep an eye on the calories of nuts whilst we are still trying to lose weight but other than that we are both pretty happy. Kids have had a fair few paleo meals and I'm working through ways to do pack-ups etc so after the summer hols will be easier for me.
Today has been v hectic: had to return to school this morning as Boy hadn't put his pe kit in his bag like he was asked (grrr), went to work for a meeting, nipped home to fetch youngest, took her to nursery, went to school prize-giving, played in park after school (kids not me!), took the kids to Shinty practice, did some ironing, some washing up. Phew. Going to bed now!

Today:
Breakfast: Half a grapefruit
Lunch: Flaxbread toast
Dinner: Scrambled eggs
Snack: Small apple/hanfull of blackberries

Tomorrow:
Breakfast: Half a grapefruit/Flax toast
Lunch: Egg salad
Dinner: Pork & Apple burger and salad
Snack: Stewed rhubarb with coconut whipped cream

Yum, coconut whipped "cream" is delicious!

Tomorrow's food:
Breakfast: Half a grapefruit
Lunch: Scrambled eggs & mushrooms on flax toast
Dinner: Steak & ratatouille
Snack: Pear & cinnamon smoothie

Hi CD :) how are you getting on? Looks good! How does it feel compared to Dukan? Have been reading up and considering it myself :)

Just need to get this last stone off!! :)

Helloooo! I feel it is much easier mentally than Dukan and am still losing weight which is great. Want a workable long-term healthy way to eat. Pros - can eat fruit/nuts! Cons - to lose weight these need to be carefully monitored!

Great to hear you are enjoying it and losing those pesky lbs :) are you eating plenty of fat? That's something I struggled with a bit on Dukan. I would feel so much more satisfied with a little fat in my diet!

Need to do a shop then I am starting :) not expecting mega lbs off on this plan but need to shift it!!

Do I eat plenty of fat? Well, the daily fruit/veg fill me up so I eat less meat protein than on Dukan and less saturated fat, however I have coconut oil and olive oil liberally and generally a portion of nuts each day. Ground almonds are amazing to bake with, great at filling you up as too is coconut flour. I feel much healthier than on Dukan. So does Mr CD.

Quick menu post, rushed off feet!
Breakfast: Half a grapefruit
Lunch: Beef salad
Dinner: Tuna "pasta" (shiritaki noodles!)
Snacks: Coconut flour cookies (yum, didn't manage to leave them to cool ), Nakd bar, apple. Hungry today, think TOTM looming.

All sounds lovely :) enjoy!! I've half started, just need to do a proper shop to stock up :)

Hi! Do you make the flax toast? It sounds yummy! Your meals look fab :)

How are you CD?

I started properly today and enjoyed my meals, LOTS! Thinking of adding in a fast or 2 as I have a couple of events this week/next and hoping it should help limit the damage!

Take care :)

Hi Anchor - Kelvin Valley as in Glasgow? I wish you luck with your weight loss, I had seven stone that had been on for about seven years and I reached a point where I got on the scales (after not being on them for a long while) and promised myself that whilst the figures were upsetting I would never see them again as I would never be that weight again. My high blood pressure is now no-more and my marriage is better than ever as we both have more energy (Mr CD was 5 stone overweight). You CAN do this! x

Wow, how are you finding it now? I feel great, can really enjoy meals knowing that they are just what my body needs and delicious to boot!
