    My peppers were stuffed with leftover turkey mix.


    OH had



    Ingredients


    • Onion
    • 2 cloves Garlic, minced
    • Ground Beef
    • 1 Tbsp Ground Cumin
    • 2 tsp Dried Parsley
    • ½ tsp Smoked Paprika
    • can Diced Tomatoes






    Instructions



    1. Preheat the oven to 350F.
    2. In a pan, heat coconut oil. Add the onions and garlic saute until the onions are translucent.
    3. Add the ground beef, cumin, parsley, paprika and cook until the beef is completely browned.
    4. Stir in the can of tomatoes. Remove from heat.
    5. Scoop the meat mixture into the hollowed out pepper halves.
    6. Place the peppers into a baking dish. Bake in the preheated oven for 30 minutes.

    Dinner: Duck in plum sauce on a bed of roasted carrots,parsnip and sweet potatoes done in olive oil and cumin seeds.

    Dinner: Chicken pizza.

    Butterflied chicken ,flattened it then put some tom paste with chiili,garlic,cheese,Choriza and red onion on a bed of swede and peas covered in black pepper.

    400g Chicken breasts(cut into bite size pieces)
    1 red chilli(deseeded and finely sliced)
    1 lime(zest and juice)
    2 Tbsp Balsamic vinegar
    1 Tbsp honey
    1/2 tbsp fish sauce
    Black pepper


    Put lime,chilli,balsamic,honey,black pepper and fish sauce in a dish.
    Mix altogether and add the chicken an hour or so before putting onto skewers.

    Either grill,barbecue or put in oven for 10 - 15 mins.Turning now and again.

    PRIMAL Moussaka

    500g Minced beef
    1 onion,sliced
    500g Mushrooms,sliced
    1 Aubergine,peeled.sliced into 1 cm and grilled
    1 Tin toms
    1 Tbsp Cinnamon
    1 Tbsp Nutmeg
    1 Tsp Ground Coriander
    1 Tsp Basil
    2 Tbsp Crushed Garlic
    1/4 cup Red Wine
    Cauliflower,pulsed into breadcrumb size
    3/4 Cup Single Cream
    1/2 Cup Grated Cheese

    Oil for frying
    Salt and Pepper

    Saute onion and garlic.Add mince,and cook through.
    Add toms,spices,mushrooms and wine.
    Reduce heat,simmer for 30 mins
    Cover bottom of dish with the cooked aubergine.
    Cover with the meat mixture.
    In a frying pan put the cauliflower and cook for about 5 mins.
    Add the cream,stir throughly.
    Add salt and pepper.
    Pour over the meat mix then sprinkle with the grated cheese.

    Cook at 180c for about 20 mins.

    Got enough left for dinner tomorrow.

    Start Date: 10 Jan 2011 (2st lost 2007/8 - 2½ st in 2011 - ½ st in 2012 - ½ st GAIN in 2013)
    Start Weight: 105kg
    Current Weight: 76.8kg
    Goal Weight: 73.2kg
    Goal Date: A day at a time! And got there on 23/11/11

    So I've reset everything (again, again) and this is what I want to achieve
    :

    START (7/7/14) - 79.4 Kg (12:7 - exactly 1 st over target )
    1. Get back to where I was at the start of the year - 77.5 (12:2¾)
    - achieved 14/7/14 - clinging on again
    2. Get back to Original target
    by 24/11/14 - 75.75 (11:13)
    3. Get back to Interim target
    by 12/01/15 - 74.4 (11:10)
    4. Get back to Final target [5 stone shiney & BMI under 26]
    by 02/03/14 - 73.2 (11:7½)
