    Smile Cavegirls road to run a marathon before it's too late.

    Been a bit lazy lately so going to log my dinners again.
    Will be a bit hit and miss until Monday as I'm going away for bank holiday.

    Here are some that I seem to stick to.Want to try some different dinners.

    Caveman Shepherds Pie.

    500g turkey mince
    1tbsp coconut oil
    Salt and pepper to taste
    1 tsp poultry seasoning
    500g of sweet potatoes, peeled and cubed
    1 medium white onion, cut into 1 inch dice
    1carrots, peeled and grated
    2 tbsp ghee
    1 tbsp arrowroot powder
    1 cups chicken broth
    125g frozen peas
    1/2 very ripe banana


    Coconut oil in pan,add turkey,add s & p,poultry seasoning
    Sweet spuds in pot cover with water put lid on,bring to boil and cook 12 mins.
    Add onions & carrots to turkey,cook for 5 mins,remove from heat.
    Add ghee to a pan whisk in arrowroot for a min add chicken broth.Season with S&P and let thicken.
    Drain all the excess oil from turkey.
    Stir gravy into turkey.
    Stir in peas turn heat off.
    Drain spuds.
    Melt 2 tablespoons ghee.
    Peel and slice banana and put in ghee,add spuds and mash.
    Spread turkey into a 9 x 13 dish.
    Spread spuds over top.
    Put in oven 200c for 10 mins

    Stuffed Chicken.

    Chicken breast
    Tom paste
    Garlic
    Leerdammer cheese slice
    Italian Prosciutto


    Put chicken breast between cling film and flatten.
    Spread tom paste on it.
    Place a slice of cheese then a slice of prosciutto.
    Put some garlic on top.
    Roll up and push a cocktail stick through to hold it all together.

    Oven 180c for 30 mins.

    Sloppy Joe Meatballs


    Butter
    1 onion
    500g Minced Beef
    1 1/2 tbsp Worcestershire Sauce
    1 tbsp Soy Sauce
    1 tbsp Apple Cider Vinegar

    Sauce
    Tin of Toms
    1/4 cup water
    1 tbsp Tom Paste
    1 tbsp Worcestershire Sauce
    1/2 tbsp Soy Sauce
    1/2 tbsp Apple Cider Vinegar
    1/4 cup Roasted Red Peppers
    1/4 cup Coconut Sugar

    Oven 350f for 20 mins
    Put butter in pan and fry onion.
    In a bowl mix all the meatball ingredients.
    Add half of the onion.
    Roll into balls and placed on baking tray.
    Put in oven mark 350f for 20 mins or until they are cooked.

    Add all the sauce ingredients to the onion in the pot.
    Simmer while the meatballs are cooking.
    Once meatballs are cooked put into the sauce and cook for a few minutes.

    Done my pork steaks in the slow cooker today on a bed of apples with soy sauce,veg stock cube,water,and 5 spice.
    They were very nice.Need to start using my camera for pics as the phone lens is broken so doesn't do very good ones.

    Afternoon tea.
    Scones,vanilla cream and strawberries.

    The scones do taste better if you eat them the day after you make them.



    SCONES
    3 cups (300 g / 10 oz) almond meal / ground almonds / almond flour
    2 teaspoons baking powder
    or teaspoon baking soda
    cup (60ml / 2 oz) ) macadamia nut oil or (cold pressed coconut oil or almond oil)
    1 heaped tablespoon honey
    1 teaspoon vanilla extract or paste
    2 organic / free range eggs

    Preheat your oven to 150 C.
    Combine almond meal and baking powder.
    Add the oil, honey, vanilla and egg.
    Mix into a soft dough.
    Dust your working surface with a little almond meal.
    Place over the scone dough and flatten out to 1 cm thick.
    Cut into rounds and place onto a baking tray.
    Bake for 20 – 25 minutes or until golden and cooked through.
    Remove from the oven and cool.

    Rainbow trout,sweet potato wedges with smoked paprika thrown over,Chantenay carrots.

    Fried the minced beef and onions in coconut oil for 5 mins then added smoked paprika.Stirred in a bag of stir-fry veg and a tin of toms.Put lid on and cooked for 10 mins.
