    Paleo/Primal Desserts/Cakes

    Just saw this on Come Dine with Me.


    Choc-acado recipe








    Ingredients


    • 3-4 avocados, peeled and stones removed
    • 1 egg white
    • 50g cocoa butter
    • 2-3 tbsp cocoa powder
    • 2-3 drops vanilla essence
    • 1 tbsp honey

    For the base


    • 20g pecans
    • 20g walnuts
    • 20g almonds
    • 1 tbsp almond butter

    To decorate

    • Strawberries, blueberries and raspberries
    • Cocoa powder
    • Desiccated coconut





    Method


    1. For the base, crush the nuts and mix with the butter. Spread the mixture in the bottom of a cake tin, pressing down to make an even base.
    2. For the filling, in a blender, blitz the avocado, egg white, cocoa butter and cocoa powder. Add the vanilla and honey to taste then spoon over the base and chill until needed.
    3. Decorate with the fruit, cocoa powder and desiccated coconut to serve.

    Banana bread

    300g banana
    1/2 cup honey/maple syrup
    3 eggs
    1 tsp vanilla extract
    1/2 cup Macadamia nut oil
    1/2 tsp ground Cinnamon
    1/2tsp baking soda
    1 tbsp Lemon juice
    2 cups Almond flour
    1/4 cup Flaxseed
    Walnuts and Cinnamon for the top

    Oven 160c
    In a blender add banana,honey,oil,cinnamon,vanilla,eggs,bicarb and lemon.Blend until it looks like thick smoothie.
    Pour into a bowl and add four and flaxseed.Mix well.
    Line your loaf tin with baking paper and pour your mixture in.
    Put walnuts and cinnamon on top.
    Put in oven for 45 - 60 mins.

    Will keep in an airtight container for a week.

    Going to do this tomorrow.

    Mint Ice Cream

    1 can of coconut milk
    1/4 cup raw honey
    2 egg yolks
    2 ounces 72% dark chocolate
    1 tsp peppermint extract
    2-3 drops of green food coloring (optional)
    Place coconut milk and honey in a medium saucepan over low heat. Whisk until blended. Add peppermint extract and optional food coloring. Stir.
    Whisk two egg yolks in a separate bowl. Temper the yolks by adding a small ladle of hot mixture, stirring continuously so as to not “cook” the eggs. Add a second ladle to egg mixture. Once combined, pour this back into the saucepan and stir everything together. Refrigerate until completely cooled.
    Follow the directions on your electric ice-cream mixture as each one may be a little different. I put the freezing cavity in the freezer overnight and the ice-cream mixture in the refrigerator overnight and then blend in the morning for about 30 minutes.
    For your chocolate, add this about halfway through the blending process. Also, you can use chips for this recipe, or as I did, just chop up half of a dark chocolate bar (I seem to find better quality chocolate in bar form).

    Don't have an ice cream maker so will do it in a plastic container and stir it every hour.

    Cashew Cream Cheesecake.



    • 1 c Raw Almond Butter, 1 c Unsweetened Coconut
    • 2/3 c Raw Pecans, 1 T Maple Syrup, 1/4 t Salt
    • 3 c Raw Cashews, soaked and drained
    • 1 c Coconut Oil, softened
    • 1 c Maple Syrup
    • Juice of 1 Lemon
    • 1/4 c Full Fat Coconut Milk
    • 2 t Vanilla




    To soak your cashews, put the raw nuts in a bowl and cover with cold water and a pinch of salt. Then place the bowl in the refrigerator and allow to soak for 4-6 hours. Don’t soak for more than 24 hours or they will become bitter.
    Generously grease a springform pan with coconut oil and place in the freezer.
    To make the crust, combine almond butter, coconut, pecans, coconut butter, salt, and syrup in a food processor. Pulse at first to combine everything, then run the processor until you have a sticky but smooth-looking mass. Scoop it out and press into the bottom of your springform pan and place back in the freezer.
    For the filling, drain the cashews but don’t let them get too dry. Place the cashews in the food processor and pulse until they are a fine consisitency. Add the coconut oil, syrup, lemon juice, coconut milk, and vanilla. Run the food processor for 3-5 minutes until you have a very smooth, creamy mixture. Pour the filling over the crust (the crust doesn’t have to be completely frozen at this point). Place the cheesecake back in the freezer for at least 3 hours, until firm.

    Blackberry Terrine
    170g blackberries
    2 tbsps water
    3 tbsps honey
    1 1/4 cup heavy cream
    3 large egg yolks
    1/2 tsp vanilla extract
    Cooking Steps
    Put the berries, water and 1 tbsp of the honey in a saucepan. Cover and heat until the water boils, turn it down to a simmer and let it bubble away for about 10 mins until the fruit is soft but not disintegrating. Drain off the liquid from the fruit and set aside to cool.
    Using an electric whisk, beat the egg yolks and honey til thick. Stir in the vanilla.
    In a separate bowl, whisk the cream until it’s thick but not stiff. It should still move around in the bowl.
    Fold the cream into the egg mixture and pour into a loaf pan lined with cling film.
    Spoon the slightly mushy berries into the liquid, swirl but don’t over mix.
    Cover and freeze for six hours. Remove from tin and slice to serve.

    I just had this for my snack / pudding for lunch at work and its so nice!

    Bananas with
    Almond Butter and Coconut

    Makes a snack for two. Approximate cooking time: 5 minutes.

    Ingredients
    1 large banana
    2 Tbs almond butter
    2 Tbs coconut milk

    Instructions
    1) Slice banana and divide between two small bowls.
    2) Top with almond butter and coconut milk.

    I mushed mine together a little just before eating

    Chocolate Sweet Potato Muffins

    Ingredients


    • 1 1/2 tbsp of coco powder
    • 1 cup of almond meal
    • 1 tsp of ginger
    • 1 tbsp of cinnamon
    • 1 tsp of ground nutmeg
    • 1 tsp of baking soda
    • 1 sweet potato peeled and sliced
    • 2 tbsp of raw honey/maple syrup
    • 2 eggs
    • 1/2 cup of applesauce






    Cooking Steps

    1) Begin by preheating oven to 350, microwave sweet potato for about 5 minutes or until soft, carefully remove hot sweet potato from microwave and either mash the flesh with a potato masher or fork, or add to a food processor and pulse. Once flesh is smooth and creamy set aside.
    2) In a mixing bowl combine all dry ingredients.
    3) In a separate mixing bowl combine all wet ingredients. Add the wet ingredients to dry ingredients, add in sweet potato. Combine all ingredients to form a smooth batter.
    4) Place liners in muffin tin and scoop in batter about 3/4 of the way. Bake for 20 minutes or until muffins are thoroughly
