    Almond Flour Zucchini Bread

    Ingredients (makes 2 mini loaves)

    1-1/2 cup blanched almond flour
    2 teaspoons cinnamon
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon nutmeg
    3 eggs, beaten
    1/4 cup honey
    1 ripe banana
    1 cup shredded, unpeeled zucchini

    Directions
    Preheat oven to 350 degrees Farenheit.
    Combine the dry ingredients in a small bowl.
    Place the wet ingredients in the bowl of a stand mixer, then beat on medium for 1-2 minutes until frothy and fully combined. Add the zucchini and beat again just enough to incorporate.
    Slowly add the dry ingredients with the mixer running, until all of the flour mixture has been incorporated.
    Spoon the batter into 2 mini loaf pans. You can also use this batter to make muffins.
    Bake for 30-35 minutes until the middle is set and a toothpick comes out clean.

    You can just use ground almonds from supermarket.

    I buy all my unusual things online from healthy supplies.

    Thanks will look at that site. I could do with a list if all the basics to have in as I'm finding it hard to transition! Trying to get OH to go this way of eating is hard! If I can make done nice alternatives it will help.

    Make sure to check the weight when buying things.

    Holland and Barrett 100g ground almonds 2.19 Tesco 200g 1.99.


    I use coconut oil,olive oil or Kerry butter( as it's from grass fed cows) for cooking/baking.Coconut oil is about 15 a pot but a little goes a long way.

    I only bake once a month for a treat as I can't stop at one piece.

    What are you doing jayde.Are you just trying to cut out processed foods,sugar and grains?

    Tuesday I cut a turnip up into chips sprayed with frylight,sprinkled some sea salt and pepper on them and put in oven until they were crispy about 30 mins at 425c. OH enjoyed them and he was a rice/pasta eater with every meal.

    Yes trying to cut out processed food, sugar I dint use now but I guess it may be in some processed stuff. Grains seems the hardest so a bread alternative will be good. In at the moment trying to do things as naturally as possible and as things run out I'm replacing with other things. My plan is to buy some big jars to keep in the cupboards for the dry stuff like nuts etc. I have just downloaded a book on paleo and started up read it but my main aim is to eat as naturally as possible for health. Do you allow yourselves cheese?
