Savoury pancakes, nice with bacon for breakfast especially if you fry them in the fat!
Adapted from the zucchini pancake recipe in Practical Paleo.
Serves 2 (4 small pancakes per serving)
1 tbsp coconut flour
Salt & pepper
1 cup grated courgette
1 cup grated carrot
Coconut oil or bacon grease for frying
Whisk the eggs with the flour, salt and pepper. Add the vegetables and mix until well combined.
Heat your fat for frying over medium-low heat. Spoon the mixture into the frying pan in 4-6 inch cakes.
Cook until they hold together, flipping once when the underside is browned.
Nice both warm and cold.
It's just occurred to me while answering a breakfast thread that these might make an inspired base for eggs benedict!!! Am going to try this at the first opportunity!!!
