6 sausages
1 tbsp coconut oil
1 onion, sliced
300g mushrooms, sliced
500g mixed peppers frozen or fresh
2 tbsp smoked paprika
1 tbsp of mixed herbs
4 tbsp of tomato puree
60ml water
Salt and pepper

Cook the sausages

Heat the coconut oil in a pan
Then add the onion and fry for 5 minutes until soft


Add in the mushroom and peppers and fry for a further 5-10 minutes until they're cooked and tender

Stir in the smoked paprika, herbs, tomato puree and water and simmer for 1-2 minutes until the sauce starts to thicken

Once the sausages are cooked, slice them into bite sized pieces and then add them to the pan.

Heat everything through, then season to taste with salt and pepper and serve
