Homemade curry - Any tweaks needed?

This is my own curry recipe, When made it feeds 4 of us plus an extra couple of full sized portions for my older twiglet son and daughter for their supper. Anything I need to be adding or removing to make it better for me while keeping it good for my twiglet kids.

600 gram chicken breast, no skin or fat
    200 gram mushrooms
    2 large onions
    1 stick of celery
    400 gram tinned chopped tomatoes
    1 tablespoon of tomato puree
    1 tablespoon olive oil

    Do herbs and spices count?
    4 tablespoons coriander leaf
    2 tablespoon minced garlic
1/2 tablespoon garam masala and turmeric
1/4 teaspoon each of ginger, cumin, ground coriander, fenugreek, black pepper.
    1/8 teaspoon cayenne pepper

I've never thought of it as unhealthy but you never know

Thats 1 tablespoon of oil between 6 portions so not too bad really. Do herbs and spices carry any countable calories?
