Tasty recipies for veggie side dishes

Restarting to lose 4stone
I know that I have 2-3 months left on ssing but I wanted to start thinking now about how best to eat.

My thoughts are that I provide fixed portions of plainish tatties and protein every meal but that I make the veggies the star of each meal.

This way if anyone is especially hungry they can load up with the tasiest things in the meal without doing any damage. ;)

So I need you lovely people to come up with a great range of recipies in which the veggies remain the side dish, are the tastiest thing on the plate yet remain healthy so you can load up on them and provide the variety I like in every meal. :D

Get your thinking caps on because I would love to have a whole raft to draw from for when I finish management :p
 
Hi, I don't know if these are exactly what you're looking for? But i''ll write them anyway.


  • You could mash together carrots and parsnip or turnip as an alternative to mashed potato. Just add pepper and salt to taste.
  • Vegetable Curry - with loads of carrota, peas, brocolli, cabbage and a few potatoes is really filling!

What I like, and they're everywhere at the moment are courgettes. Try griddling slices brushed with the tiniest bit of garlicky olive oil, then sprinkle on a tiny bit of low fat feta cheese. Lovely with pasta, or potato and grilled meat.
Another good side dish at this time of year is ratatouille. I love griddled aubergines too.
Another good summer one is put cherry toms, blanched green beans, black olives and anchovies on a roasting tin and bake. The anchovy filets melt but you can leave them out if you don't like them. Hope these ideas help.
