    Swede rosti!

    Just thought I'd post a pic of the swede & shallot rosti I made this evening. I grated a small shallot and some swede (it came to 100g) squeezed out the excess water then mixed it up with salt & pepper and about half a beaten egg. The egg wasn't part of my planned meal but I've accounted for it and am still under 700 cals for the day! Sprayed a baking tin lined with baking paper with fry light, dolloped on the mix in four spoons full and squished them down a bit then put them in the oven for about 20-25 mins at 180. I carefully turned them over halfway through and they were lovely! Had them with curry and 50g broccoli.
