Made this curry last night and it was lovely!

Ingrediants
Swede -diced
Cauliflower -chopped into medium and small pieces
Green beans -topped and tailed and cut into inch long pieces
chicken breast -diced fairly chunky
Tandoori spices (or any spice blend of your choice)
Nigella seeds (onion seeds)
Stock

-Start off with the swede, boil in just a small amount of water (barely covering it)

-Now get your chicken into the oven, spread onto a tray, cover in seasoning, cover with foil to seal in moisture, takes around 15-20 mins at about 180 degrees C

-Once the swedes bubbling away, onto a lower heat, add stock and spices

-When the swede is soft, heat off and hand blender in to make into a puree.
-It might be very thick so add more water to a consistency you're happy with and then chuck in the cauliflower, green beans, and nigella seeds.

-Keep cooking until the veg is cooked as you like it (I like mine with some crunch!) stir well as it might catch.

-Fill bowl with delicious sauce and top with yummy chicken!

As its quite thick its like eating a yummy soup with chicken and veg pieces but curry flavours, dont make it too spicy as you have no rice or bread to pad it out with, even if you can handle your spices, id still go less spicy than you might normally.

ooooo sounds lush! Also sounds freezable for easy meal options

Yes, Im sure it will freeze easily, the sauce made loads too as I put a whole swede and cauliflower in it, probably at least 4 portions! got some left in fridge
