    Well, I'm back!

    I haven't been on plan for many reasons for about a year now and very depressingly am back up to 13st 11lb

    Ill be doing it from home, this time round my OH will be doing it with me which is a massive bonus and hopefully will make things a little easier.

    Hi Sparty,

    I'm following extra easy, just because I work in London and find it easier with a long day to be able to eat everything. Plus I love my veggies so always have 1/3 super free

    I use to do red days all the time, feel free to steal any meals you like and by all means let me know of any good ones you steal from other people!! Haha

    Ratatouille

    1 green pepper
    1 yellow pepper
    1 onion
    Good handful of mushrooms
    1 tbsp mixed herbs
    1 tin of tomatoes
    1 tbsp paprika
    1 large garlic clove
    1 Italian oxo cube
    1 beef oxo cube
    Dash of Worcestershire sauce
    Pinch of cayenne pepper

    This is a lovely one for any left over veg so long as you have a tin of tomatoes and some herbs in your cupboard

    I chuck everything except the tin of tomatoes in a pan (chunky or diced whatever your preference) with some frylight and cook until it starts to soften, then add the tin of tomatoes and half a tin of water and simmer until soft. Add salt, pepper or other seasoning to taste and it's done!

    Serve with chicken on a red day or some potatoes on green - both if your doing extra easy.

    So that's dinner tonight sorted and added some pasta for my lunch tomorrow (green or extra easy only).

    No hassle at all really!!

    I used sweetcorn instead of yellow peppers (don't do this if your on a red day as I believe they are not free)

    My dinner today was a nice big old stir fry with sugar snaps, mangetout, baby corn, spring onion, peppers and mushrooms with prawns, soy sauce and Chinese 5 spice. Yum!!!

    Right then, in bed now so the munching stops here, only need to add 1 slice of carrot and SW hummus which I will retry the recipe as it was a bit naff to be honest.

    Sprinkle of cheese on my ratatouille but I will count it as 2 syns just to be on the safe side as I was a naughty girl and didnt weigh it.
