I realise you wrote this a whole ago, but I eat a lot of quinoa. I use it in Mexican dishes and put par paprika and dried chillis in the water when it's cooking so the chillis plump out. (Leave them whole if you want to fish them out) then I just put it in a wrap (hexb if I can) with a bit of cheese, salsa and a bit of avacado. It's delicious. Could add chicken as well.
Also nice with stir fried veg and soy sauce and ginger.
Add to soup to bulk it out a bit
Tabbouleh salad (normally bulgur wheat) - good for packed lunches.
Make a sort of creamy pasta risotto type thing. With this I usually roast some veg. Butternut squash and stuff like that and then boil the quinoa, when it's cooked stir in the veg and some Phili light
