Started back on slimming world yesterday, doing it from home as I can't afford to go to group anymore. Annoyingly I have lost one of my books so having to search for syns, but hoping I can manage.
Friday-green day

I was out at a course until 10:30pm, so my husband had made dinner for me, forgetting we were trying to not use oil, but at least he had measured it and only used a bit.

Plan for today is also a green day as I don't eat large amounts of meat, but love my pastas, rice and noodles. Also we struggle to afford enough super free to make extra easy work well for me.

Saturday

omlette - 1tsp rapeseed oil (can this be part of an HEB, I think a tsp is about 2syns)
- 2 eggs
-lots of mushrooms
- mixed herbs

Snacks

pork vindaloo- 100g pork
- onions

- chopped tomatoes
- ground cloves, mustard seeds, chilli powder, cinnamon

Mini milkybar (1.5syns)
Sugar free jelly (1.5syns)
Will have some milk as HEA

How does this all look?

I was getting hungry, and about to start cooking dinner, with DH told me he had a meeting to go to! Normally this would have meant me going to the shop for some crisps and chocolate, but instead made some pasta and had a mini milky bar, so pleased with myself!
 
No idea what I'm doing for dinner tonight, but will involve my HEB of pork as thanks to a tesco.com error, we got 2kg of pork for £4.50!

Just making a brunch for DH and I, trying the hash browns, and also trying potato scones (guess what we ave to use up...). Think the hash browns are free (potatoes, egg, spring onion & seasoning), and the potato scones should be 1 syn each (mashed potato and 2tbsp of flour, but makes 10). Then got some BBQ beans, and will do some mushrooms for me and a 'fried' egg for DH. Hope that should keep us going until dinner...
 
After DH and I managed a 2 mile walk (me with the help of my crutch), I've been stuck on the sofa all afternoon. Got my dinner made, basically syn free!

So, today meals have been

BBQ beans
Garlic mushrooms
HEB of olive oil

fried rice- basmati rice
- spring onions
- 100g pork (HEB)
- garlic
- ginger
- soy sauce
- 0.5 tsp tamarind paste (1tbsp is 1 syn, so think this is negligible)
- peas

Snacks
tangerine
mini milkybar (1.5 syn)
Gin (5 syns)
 
Not feeling so great today, my leg is really painful, but I'm not going to give in to my normal comfort eating with the excuse taht I need to line my stomach for painkillers!

Didn't manage any breakfast, had planned to have an omlette, but slept in, so just 2 meals today.

You can still line it, just with the right stuff ;)

Absolutely Pippa, just a shame that for the last 3 months I've used it as an excuse to grab huge lunches and snacks!
 
Decided that we will have some Paprika pork, made with loads of sauce and only a little pork, with a huge bowl of rice for dinner, can't wait!

Also got my hairdresser coming tonight, so finally get rid of my roots
 
The paprika pork was brilliant, my favourite thing so far, and seemed easy, DH did the cooking tonight though. Shared my jelly again, so think I have got through today with just one syn. Will have a chunk of cheese as a HEA to finish off the day, never seem to manage to get two HEA in a day, although getting 2 HEB isn't normally an issue
 
Paprika Pork (adapted from SW website recipe) (2 servings)


  • 2 red onions, sliced
  • 1 red pepper, deseeded and cut into chunks
  • 200g lean pork fillet, cut into chunks
  • 2tsp - 2 tblsp smoked paprika depending on how much you like it
  • 300ml chicken stock
  • 2 tbsp fat free natural fromage frais (free) or creme fraiche (add 1.5 syns per tablespoon)
  • Salt and freshly ground black pepper


1. Spray a large frying pan with fry light. Add the onions and pepper and cook for 5-6 minutes, until going soft, stirring occassionally.
Stir in the pork and cook for 4 minutes or until browned. Sprinkle over the paprika and cook for 1 minute.
Add the stock to the pan and bring to the boil, then cover with a tight-fitting lid and simmer for 30 minutes. If the sauce looks a bit runny, just take the lid off and allow it to thicken a bit.
Add in the fromage frais or creme fraich, stir it in and then serve on loads of rice.

On a green day this is either free or 1.5 syns if you have the creme fraiche. Obviously this is if you use the pork as one of your HEB. Not sure about on EE, think if you added in more vegetables then it would be free, and on a red day, serve with something other than rice

I've got my best friend coming round tonight for a bit of a girly night as she's just split from her man. Planning on having a couple of gins with her rather than the couple of bottles of wine we would normally have, so that will save some syns. If I have 4 then that's within my allowance, and I have a measure to make sure I'm not too generous.

We are going to really struggle financially the next few months, so I've just done a SW friendly shopping list which I have got to £21 for the week. Going to buy lots of dried beans and pluses, you can get a bag of mixed dried beans for about £1, and we use that to make huge portions of 5 bean chilli. Also getting a big bag of potatoes, lots of tomatoes and a bag of quorn mince. Fruit might have to go, but I'm sure a couple of months will be fine. Also getting loads of eggs, so think we should manage ok, and we got a massive bag of dog food the other week, so that should do us about 3 months!!
