Food diary to shift a stone

Hi!
I've slowly gained about a stone since last October/November time and need to face it full on and shift it! I'm coeliac and since diagnosis 3 years ago I've found my weight has gradually increased and been harder to shift, not complaining as it was hell before but it is annoying. I'm a full time student on a tiny budget (like a lot of folk) so need to spend wisely, eat healthily and not drink so much wine! I would love to be at target by christmas but I feel life may get in the way, as long as the scales are going down I'll be happy. I was a target member of slimming world but I cant afford to go back to group at the mo so will be going it alone.

I'm buzzing to get going, I find slimming world is easy to follow on a budget as long as I plan ahead. I dont like to use a lot of fat free products or things like frylight so will have to use my syns/healthy extras wisely. I also need to make sure I get to the gym when I'm not working and not be a girl about going in the weights room when its full of chaps!

Today's food plan... red day

Breakfast - gluten free toast (b) with spread (3s) and fruit

Lunch - homemade creamy cauliflower soup (a)

Dinner - chicken casserole made with marrow, courgette, mushrooms, squash, onions, carrots and a stock cube, oil (b) I have a whole chicken to breakdown so will probably use a breast today.

Aldi chocolate mousse (12s)

Had to forgo lunch yesterday as I got too busy, just snacked on apples throughout the day, so will be making the soup today using the chicken stock I made in the slow cooker from yesterdays chicken.

Today is mostly uni work and housework, very glamorous day! Not sure if I've got some training with work this evening or not yet, hoping to find out this morning and not half an hour before I need to be there.

Food plan for today:

Breakfast poached eggs on g/f toast (b) with a banana

Lunch will hopefully be the cauli soup (a) if I get into gear! with some bacon

Dinner will be gammon with roasted veg and spicy couscous - I found some gluten free couscous in tesco's so hoping it'll be yum

Might pick up something sweet for after dinner, and will have some fruit for a snack, trying to snack less when I'm just in the house as its so easy to procrastinate and just eat.
 
So tuesday was a bit of a write off diet wise! It all started off well with eggs on toast for breakie but my boyfriend came down and decided to take me out to an amazing thai restaurant so had half a bottle of rose, a starter of prawn hot and spicy soup, lamb gang massaman curry which was cocconut milk based with gluten free egg fried rice and then chocolate torte for dessert, we went for a cheeky drink on the way home so had a vodka lime soda. I only see him every few days as he had to move to a different city for work so I dont regret it, was back on it Wednesday so hopefully wont be too damaging :eek:

Wednesday:

bacon sandwich (b+3 syns) this was brunch as didnt get up until late

fruit

beef in tomato sauce with rice (a)

1/2 bounty (7syns)


Thursday:

scrambled eggs (1/2a) with beans and toast (2b+3syns)

fruit- had a bit too much fruit but missed lunch

veggie pasta bake (1 1/2a)

1/2 bounty 7 syns


Todays food:

fruit salad and scrambled eggs - different bowls - (1/2a)

banana and apple

bounty bar 14 syns - these are my weakness lol yum yum!!

spicy beef one-pot - total lazy cooking lol I have beef heart cut into chucks so its very lean will cook with onions, chillies, mushrooms, peppers, tin toms, will have with a jacketed sweet potato (1/2a + b)

I've got an unexpected weekend off, was supposed to be working all day today and tomorrow so dont really know what to do with myself!

Think I'll do EE today:

apple
beans and eggs with toast (b+ 1syn)

I retrieved a portion of last weeks gammon, veg and couscous from the freezer so that will be lunch, not sure how well gf couscous will defrost
piece of fruit ****edit: ewwwww do not try eat defrosted couscous, it went in the bin rather sharpish lol didnt bother cooking anything else to eat so just had some fruit

putting a beef chilli in the slow cooker - I dont have any rice so might do a jacket pot, will have some Parmesan on top (a)

it feels good to have a plan! I'm starting to get excited about meals again which is good as I love cooking and creating new meals but sometimes busy lives make it more of a chores especially when you end up eating the same thing each day.

Going to do uni work, I had a mega house clean up yesterday and then I might go for a walk and go for a sunbed (I knoooooow) should really head to the gym but
think I've slept a bit funny as my hip is killing me, I'll get my squats done at home and do some pull ups on my flatmates bar, then get to the gym tomorrow.

Sundaaaayyy! having a lazy morning then off for a long walk, should probably do some uni stuff at some point too.

Food for today:

brunch of fruit, beans and dry fried eggs on toast (b+1syn)

dinner will be some leftover veg and sauce from the chilli (ate all the chunks of meat last night as I only put one portion in, man it was yummy!)
with some herby chicken and steamed potatoes (a)

once again I have a bounty bar to look forward to at the end of the day mmmm (14syns)
