I lost 2st with Slimming World in 2013 and then put 2.5st on during pregnancy with my daughter who was born in April this year. I have been on and off plan since then and have started various diaries on here which didn't last very long.
I have lost the confidence I gained last year, none of my slimmer clothes fit and I feel more frumpy mummy than yummy mummy. I'm making a fresh start from here on and I'm determined to see this diary and my weight loss through this time! I started with a 1lb loss in my first week (I weigh in on Wednesdays) and so you join me on my second week on my journey to the 8's... no matter how long that will take :)
 
09/10/2014 - Extra Easy Day

Breakfast - strawberries, 1 WW toffee yoghurt

Lunch - sausage and cheese wrap (2 Quorn low fat sausages, 30g cheese (hexa), 1 BFree wrap (hexb), 1 WW Chocolate Brownie Dessert (8.5)

Dinner - egg salad (3 eggs, lettuce, cucumber, cherry tomatoes, celery, sweetcorn)

Snacks - cup of tea with sweetener and splash of skimmed milk (1)

Total Daily Syns - 9.5/10
Total Weekly Syns - 9.5/70

10/10/2014 - Extra Easy Today

I met the NCT ladies for a pram walk and lunch today. Luckily we got a few hours of nice weather before the rain started. I didn't make great decisions at lunch though...

Breakfast - 1 banana, 1 WW vanilla yoghurt

Lunch - cheese and tomato panini, 1 small hot chocolate (let's say 30 syns)

Dinner - pasta with 60g Low Low Black Pepper cheese spread stirred through (hexa), 2 Alpen Light Chocolate & Fudge cereal bars (hexb)

Snacks - cup of tea with sweetener and splash of skimmed milk (1)

Total Daily Syns - 31/10
Total Weekly Syns - 40.5/70

Breakfast - blueberries topped with 1 WW Vanilla yoghurt and 30g Special K Cranberry, Pumpkin Seed & Almond Granola (hexb 1 of 2)

Lunch - Mugshot Tomato & Herb, 1 banana

Dinner - Mac n cheese (macaroni, 60g red leicester cheese (hexa x2) spring onions, cherry tomatoes, peas, vegetable stock, tomato puree, fat free natural yoghurt, 1tbsp mustard (0.5), 2 eggs, salt and pepper) served with carrots, green beans and sweetcorn

Snacks - 2 Alpen Light Chocolate & Fudge cereal bars (hexb 2 of 2)

Total Daily Syns - 0.5/10

Here you go ladies...

Syns per serving : Extra Easy & Green FREE
Add 6 syns if not using the Red Leicester as a Healthy Extra

300g dried macaroni
fry light
6 spring onions, thinly sliced
2 garlic gloves, finely chopped
200g cherry tomatoes, halved
400ml vegetable stock
4 tbsp tomato puree
200g fat free natural yogurt
1 level tsp english mustard
2 eggs, lightly beaten
120g red leicester, grated (healthly extra or 6 syns per portion)
salt & freshly ground black pepper

1. preheat your oven to 200c or fan oven 180c/gas mark 6
2. Cook the macaroni as per the instructions on the packet, drain & set aside
3. spray frying pan with frylight: add spring onions, garlic, cherry tomatoes, stir & cook for 2 minutes. Transfer to a mixing bow and add the cooked macaroni.
4. beat together the stock,tomato puree, yogurt, mustard & eggs until smooth. Pour over the macaroni, then stir in most of the cheese. Season and toss well.
5. Divide between 4 shallow individual overproof dishes, sprinkle over the remaining cheese and bake for 15 - 20 minutes or until bubbling.

Leave to stand for 5 minutes then, serve with salad or mixed vegetables.

Lunch - 2 Alpen Light Chocolate & Fudge cereal bars (hexb 2 of 2)

Dinner - Pasta n Sauce Cheese Leek & Ham (1) with 1tsp of English mustard (0.5) and sweetcorn stirred through

Snacks - 350ml skimmed milk (hexa), 2 Toffiee (4), 2 Ryvita Fruit Crunch (6) topped with 30g Cadbury Philadelphia (4.5)

Total Daily Syns - 16/10
Total Weekly Syns - 57/70
