101 lb to lose

I joined Slimming World on Saturday 18th April weighing 16 stone 10.5 lb. at my first weigh in I lost 5.5 lb. I've eaten more than I usually do but have been filling up on veggies. This is my food diary starting on Tuesday 28th April - Day 11 of my Slimming World journey.

Breakfast - Green tea, Apple, banana

Lunch - Roast beef salad with homemade 1 syn coleslaw
Roast beef, cos lettuce, cucumber, spring onion, carrot, white cabbage, red onion, fat free natural yoghurt, lighter than light mayonaise

Snack - Skinny Cappucino Mullerlight, Chocolate & Fudge Alpen Light bar, tangerine

Dinner - Cottage pie topped with carrot suede and sweet potato mash and veg
Lean beef mince, peas, carrot, kale, spring greens, broccoli

Healthy Extras - A - 40g reduced fat cheddar (on cottage pie) - B - Alpen Light bar as snack

Syns - 2 - 1 for coleslaw - 1 for gravy in cottage pie

Wednesday 29th April - Day 12

Breakfast - Coffee with 1 sweetener, banana, Skinny Cappucino Mullerlight, Chocolate & Fudge Alpen Light bar (HexB)

Lunch - Left over Cottage Pie
Lean beef mince, peas, carrot, kale, suede, sweet potato mash, reduced fat cheddar cheese, broccoli, green beans

Snack - Cherry Mullerlight, Alpen Light bar (hexb)

Healthy Extras - A - 40g reduced fat cheddar (on cottage pie) - B - Alpen Light bar x 2

Syns - 2 - 1 for gravy in cottage pie and 1 for milk in coffee and tea


I was such a grump yesterday as I didn't eat enough so today I had a humongous lunch, and was too full for dinner.

Thursday 30th April - Day 13

Breakfast - Black coffee, Skinny Cappucino Mullerlight, tangerine, Chocolate & Fudge Alpen Light bar (hexb)

Lunch - Ham salad
sliced lean ham, cos lettuce, cucumber, spring onion, light mayo

Dinner - Ham & mushroom omelette with side salad
sliced lean ham, mushroom, 3 eggs, cos lettuce, cucumber

Healthy Extras - A - Semi skimmed milk in tea - B - Alpen Light bar for breakfast

Syns - 2 - Light mayo in lunch
 
Ooo good luck for Saturday! I think I might use your idea of having a yoghurt with breakfast, my Alpen light is getting a bit boring on its own!
 
I'm not either really - I only eat brekfast because I know that it kick starts your metabolism for the day! My WI is a Friday morning (I weight at home don't go to group). Lost a pound this week so not too bad! Fingers crossed for your half stone this week!!
 
Friday 1st May - Day 14

Breakfast - Porridge oats (hexb) stacked in Skinny Cappucino Mullerlight with strawberries

Lunch - Prawn salad with homemade seafood sauce - 3 syns
Cos lettuce, cucumber, spring onion, lighter than light mayonaise, tomato ketchup, paprika

Dinner - Italian chicken soup with 30g cheddar (hexa)
Chicken, tomatoes, passata, carrot, onion, Italian herbs

Healthy Extras - A - 30g cheddar in soup - B - 35g porridge oats

Today was my brothers birthday. I drank diet coke at the pub and resisted birthday cake. Roll on weigh in!

Saturday 2nd May - Day 15

Breakfast - Scrambled egg, bacon with the fat trimmed, mushrooms, beans, sausage (6.5 syns) 2 slices of wholemeal toast (hexb)

Dinner - Cottage pie with carrots and broccoli
lean minced beef, peas, onion, kale, suede, carrot, sweet potato, gravy (1 syn)

Snacks - Tea and mini blueberry muffin (6 syns)

Healthy Extras - A - 40g reduced fat cheddar - B - 2 slices wholemeal toast

Syns - 16 - 6.5 sausage for breakfast - 1 gravy in cottage pie - 6 mini muffin - 2.5 milk in tea

I enjoyed every syn. Yum.
 
Sunday 3rd May - Day 16

Breakfast - Soft boiled egg, 2 slices of wholemeal toast (hexb), melon and cantelope

Lunch - Butternut squash soup
Butternut squash, onion, potato, garlic, vegetable stock

Dinner - Turkey Mince Lasagne
Turkey mince, onion, mushroom, peppers, courgette, tinned tomatoes, passata, garlic, lasagne pasta sheets, fat free natural yoghurt and egg for the white sauce, reduced fat cheddar cheese (hexa) on top

Snacks - Sliced apple and toffee mullerlight

Drinks - 4 x Old J spiced rum and Pepsi Max (10 syns)

Healthy Extras - A - 40g reduced fat cheddar - B - 2 slices wholemeal toast

Syns - 12 - 10 rum - 2 milk in tea
 
Monday 4th May - Day 17 - Bank Holiday

Breakfast - Starbucks skinny caramel macchiato with sugar free syrup (hexa)

Lunch - Turkey Mince Lasagne
Turkey mince, onion, mushroom, peppers, courgette, tinned tomatoes, passata, garlic, lasagne pasta sheets, fat free natural yoghurt and egg for the white sauce, reduced fat cheddar cheese (6 syns) on top

Dinner - Sausage, mash, peas, and mushroom gravy
1 cumberland sausage (6.5 syns), mashed potato, peas, mushroom, gravy (1 syn)

Snacks - 3 x homemade brownies (3 syns)
Egg, cocoa powder, sweetener, vanilla extract

Healthy Extras - A - 350ml skimmed milk - B - none

Syns - 16.5 - 6.5 sausage - 1 gravy - 6 cheese - 3 brownies
 
I got the recipe from @kindplates on IG.

6 eggs separated
55g cocoa powder (9 syns)
100g sweetener
1 tbsp vanilla essence

Mix all ingredients except egg whites together.
Lightly whisk the egg whites then fold into the mixture.
Bake in a preheated oven at 180° C for 25-30 minutes.
Cut into 9 brownies for 1 syn per brownie.

They were a little too sweet for me and tasted much better while still warm. Once they had cooled the texture was a little 'eggy'.
 
Tuesday 5th May - Day 18

Breakfast - Slice of melon, slice of cantelope, and strawberry Mullerlight

Lunch - Busy day out and about so didn't get chance to stop

Dinner - Rump steak, peas, sliced buffalo tomato, and portobello mushrooms topped with 4 Light Laughing Cow blue cheese triangles (hexa)
BEST DINNER EVER!

Healthy Extras - A - 4 x Laughing Cow light cheese triangles - B - none

Syns - 0
Making up for a few syn heavy days earlier in the week!
