Lemon Couscous Cake

sin free on a green slimming world day. 6 oz cous cous
juice from 2 lemons
canderal to taste
3 eggs.
Place cous cous in a bowl with lemon juice.
cover with boiling water and allow to soak for a few minutes.
separate the eggs and stir in the yolks.
whisk the whites and fold into mixture.
pour into loaf or cake tin and bake for aprox 30 min’s at 180c.

I've made this in the past - I think it's like a steamed pudding - there are lots of other versions too - I have put some sultanas in (and synned them) and added cinamon. I tend not to drink tea or coffe at the weekends so made syn free egg custard to go with it.

A word of warning I think is not too over indulge in this although it's free - still think of it as a treat rather than staple diet.

I also made the syn free lemon meringue last weekend and it was delicious!

cake sounds lovely but my consultant said that we had to syn cous cous when using it as flour - is that right?

My version:

125g cous cous soaked in 200ml boiling water.
Then stir in:
2 tablespoons lemon curd
Juice of a lemon (and zest if you like)
2 beaten eggs
3 tablespoons granulated sweetener.

Bake for 30-35 minutes at 190c or mk5.

I don't have an oven, so I bake it in my Remoska cooker.

I like to eat this warm, with yogurt.
(It is also nice cold, spread with unsalted butter, but you didn't hear me say that!)
 
The other day I fancied some lemon cous cous cake but had run out of lemon curd. Next time I was at the shops I got some, got home, then found I had run out of cous cous!! Dim or what!!
 
I just made this for the first time tonight,bland alone but lush with the lemon curd.
Here's the recipe I used-
4oz Couscous (not ground) soak in water for 10 mins ,in seperate bowl beat 2 eggs ,1/2 tsp baking powder ,4x sweeteners ,and a muller light of your choice.
Mix with the cous cous with the other ingredients place in a microwaveable tub and cook for 10 mins.
Leave to cool cut into slices and serve with 1tsp of lemon curd.(0.5 syns)

Yes that's right, but for this receipe the couscous isn't being changed i.e. it's not being ground, so it is still classed as a free food ;)
I think we all need to bear in mind that although we are not counting calories this recipe alone is 1380 calories. It is not a recipe for those who find it difficult to lose weight or moan they have STS. Two big Macs are only 980 calories !!!!!

The couscous is about 100 cals per oz made up ,my recipe uses 4 oz (400 cals) the muller light is 99 cals (off the top of my head) the sweetener I used is 2cals per tsp (8 cals) eggs 100 cals each ,not sure on the baking powder but can't be much surely??
Thats 708 by my calculations???

whoops wrong calculation sorry Cous cous is 365 calories per 100 gms and the original recipe had 6 ounces which is about 180 gms (648 plus 2 eggs 848 mullerlight 948 calories. 2 Big Macs are 980 still not much difference so 42 calories less .

And people quite happily eat this as free.......(apart from the lemon curd syn) yet would feel guilty eating the Big Macs?? ;)
