I would like some new ideas for lunches. I'm doing extra easy and getting a bit sick of pasta with a tomato sauce everyday...

Make yourself a lovely SW quiche and take a big chunk to work!

Might try that. What sort of things do you put in it?

Thankyou :)

Just thought - some Sw style KFC chicken would be nice too hun x

i might try the quiche tonight too. although i am very confused now that i've read about 397502 different recipes!

I dont even folllow a recipe - average size quiche dish :
3 eggs, LF cottage cheese or quark, veg or meat ( pepper, mushrooms, ham, spinach, onion, bacon )
Fry off the veg to remove water, add to dish and grate cheese on top!

haha! how the hell am i meant to choose?!

oh thanks Jen x

what about potato, pasta and tuna salad with mint sauce?? Boil new potatoes and pasta (can do them in the same pan if you want) When cooked, chill in fridge (overnight is fine) then in the morning, flake a tin of tuna into the mix and make up some mint sauce with malt vinegar (check for a syn free one like Colmans Garden Mint Sauce) then mix all together - it's yummy honest. I you're on Green, you can do the same but substitute some feta instead of the tuna and use as your HexA and that's lovely too.

Loulou i use..

3 eggs
Low fat cottage Cheese (300g tub)
Ham
Mushrooms
Spring onions (fry off the mushrooms and onions)
mix it all up, and spray a oven dish with fry light, then pour into said dish (or hot pink silicone baking thingy i purchased recently so you dont need fry light ha ha) and then put in the oven at number 6 and mine takes about 30-40 minutes, but i like mine cooked solid (never have liked a runny quiche) it will go brown on top and you know its done, simpless as Meerkat would say :) you can put cheese on top but if you want a completely syn free meal this is it (as long as the cottage cheese is pretty much fat free!) xx
