picnic ideas please

Im doin green i'd also like to know how make a meat free sw quiche please x
 
I made a 'neutral' quiche the other day, added roasted veg to the dish (butternut squash, peppers, onions) then mixed free cottage cheese with some eggs (think I used 5 for a largish flan dish) and some herbs, salt and pepper, poured over the top, then I topped with sliced tomatoes.

Cooked it on gas 5 for about 20 mins I think (or until the egg mixture was cooked through)

Was scrummy hot and cold
 
Ooh and for your picnic you could make a potato salad, cous cous, some hard boiled eggs and quorn sausages

I'm having picinic tea on Saturday & I'm taking boiled potatoes, coronation chicken (made with quorn), tortilla, and for pud, I'm going to boil some pudding rice, mix in 0% greek yoghurt & add billberries;) As I'm driving it will be washed down with some low calorie fizzy ginger ale.
 
I know it sounds wierd, but I made a quiche out of Spicy Refried Beans and it was lovely :)
 
You should take the Chickpea Dhal Loaf the recipe on here and i was surprised how good it tasted cold would be lovely for a green day picnic. Also a cold pasta mixed with extra light phillidelpha.
