I thought i would make a thread with all my recipes i have done and pictures too. ( mostly cos i keep losing where i have posted them all....lol)

Might take me a while to piece them all together.....

GREEN Negligible+1HEA+ any non free toppings

*honeys Pizza for one ( increase quantities for more)
1 medium potato - grated and squeeze all the liquid out
1 egg - beaten
2 tomatoes - chopped
1/2 onion red or white - finely chopped
tomato puree 1 squidge!
28g full fat chedder HEA- grated
what ever toppings you like ( i had roasted veg)

soften onion in fry light, and then add tomatoes, puree and season and i added herbs too and soften and cook until pizza sauce.
mix potato and egg together and season ( i also added some mixed herbs in)
spray small frying pan with fry light and get hot, pour potato mix in and flatten out and leave to cook, when underside is done slide onto a plate and then turn over back in to pan.

place tomato sauce on to potato pizza base then add your toppings and then cheese and place under grill till toppings hot and cheese melted.

***NB i DONT use low fat cheese as it doesnt melt properly! and for this 28g is fine.

SW KFC ( with Quorn fillets)

I used a oxo cube with tiny bit of water and mixed that in with the egg instead of the bovril paste ( i didnt really look at the recipe properly, just saw bovril and thought oxo cube was the same!! but seemed to work ok ( used veggie cube for me)
and for spices i used 1tsp pepper, 1tsp salt, 1 tsp paprika and 1/2tsp mixed spice

So i kinda followed this recipe but used the above spices ( and quorn fillets)
Syn Free KFC

10 x Chicken Drummers or 4 Chicken Breasts
1 x Tub Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed (optional if you dont like garlic)
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional)
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbes

Method
Place chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.

Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.

Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.

Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.

Broccoli and blue cheese soup

1 head broccoli, cut in to florets
1 onion, chopped
1 clove garlic, chopped
Veg stock
4 Laughing cow Blue cheese squares

1) soften onion and garlic in frylight.
2) add broccoli and enough stock to cover
3) simmer until tender
4) melt in cheese squares and season
5) blitz with hand blender

Its made in like 15 mins, so almost as quick as opening a can! and much better for you

Its Britmums Squidgy chocolate cake ( 1/2 the recipe - so 4.5 syns)

Ingredients
9 syns for entire cake
6 large eggs seperated
1/2 cup of splenda (or other sweetener)
2 oz of cocoa powder (be sure to use real cocoa powder and not drinking chocolate etc)
Method
Preheat oven to 180c or 350f, spray a oven proof cake tin with non stick spray
Whisk the egg whites to the soft peak stage and set aside.
Then place the egg yolks in another mixing bowl and whisk until they start to thicken, then add the splenda and continue to whisk, but be careful not to let the yolk mixture get too thick. Add the cocoa powder into the egg yolk mixture and if it starts to get too stiff, add a little of the egg white mixture.
Carefully fold the egg whites into the chocolate mixture and then pour the mixture into the cake tin.
Bake the cake for approx 25 minutes until springy.Remove it from the oven but leave it in the cake tin to cool.

with defrosted frozen cherries from sainsburys and light squirty cream
the recipe for cake made a flat cake so i cut the cake in to 4, placed cherries on 2 of the 4 then put the other 2 pieces on top, topped with more cherries and a squirt of cream................ delicious
so 2.25 syns for cake, cherries free and 0.75 is being generous for the squirt of cream ( 12.5g = 1 syn) 12.5g of squirty cream is A LOT!!

Strawberry scones

Strawberry 'scones'
makes 12
Syns
GREEN 3 syns each
EE 3 syns each
RED 3 syns each

6oz self raising flour
1/2 tsp aking powder
1oz low fat spread
3-4tbsp sweetner
1 pot strawberry mullerlight
1oz sultanas

sift flour and baking powder into bowl, add low fat spread and rub fat into flour.
add yogurt and sultanas and form into a dough ( add yogurt in stages, mine got too wet)
chill for 3 hrs
pre heat oven to 220c
roll dough out into a rectangle and cut into 12 ( you can use a cookie cutter, but it didn't work very well, so i would just cut into 12 equal pieces. put on frylighted baking tray and cook for 12 mins.

(They dont rise like real scones)

Jelly, is just Sugar free strawberry jelly with strawberry halves and Squrity cream on top

I made these tonight but with orange flavour. used orange yogurt and 1oz candid peel instead of sultanas.

312g raspberries ( have also been using Frozen cherries)
28g cocoa powder
3 sachets of hightlights hot chocolate drink ( i used 33g out of a big jar)
4 tbsp artifical sweetner ( i added 2 more)
500g pot low fat fromage frais
1 tbsp vodka ( or whatever spirit you like - i didnt like the vodka, couldnt taste it!)
1 egg seperated

method
1. Retaining a few to garnish, lightly crush the raspberries and divide between 4 glasses.
2. sieve the cocoa powder in to bowl with the drinking chocolate, sweetner and vodka and fromage frais and egg yolk mix until smooth.
3.Whisk the egg white until stiff, then fold in gently.
divide between the 4 glasses and chill for 2-3 hours
serve garnished with raspberries and mint leaf. and some light squirty cream

Poached pears

conference pears one per person ( 3 of us) peeled but leave stalk on
300ml red wine
300ml water
5 tbsp sweetner
cinnamon powder
2 star anise

put all ingredients in to a pan and bring to boil and then simmer with a lid on for 30 mins, turning pears over every so often.
remove pears and boil liquid until reduced and syrupy.
serve and enjoy

the 300ml of wine in 10syns so between 3 of us 3.5 syns.
Now i decided i was not going to syn the pear, as i was only eating one and i could just as easily eaten the raw pear with the sauce, so was not synning the cooked pear. if you are going to syn the pear add 2syns ( i could only find syns for 113g stewed without sugar)

Quorn Kofte and mint Tzatziki

Quorn Kofte serves 1
1/2 can chick peas
100g ish Quorn mince
egg enough to bind
1/2 chopped onion
clove of garlic
(The following quantities of spices were for a recipe using 1lb of beef, so i just added what i thought would be ok for me, but i just chucked it in by eye! so about a 1/4 of these quantities)
1 tablespoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
salt and pepper.

I gently softened the onion and garlic in fry light, then blitzed in food processor, add chick peas and blitz then add mince and egg and spices and blitz again. mould into balls and place on a fry lighted tray and bake for 10-15 mins at 200c

I served in a pita bread with lettuce and tomato with a carrot and red cabbage coleslaw and Tzatziki

Tzatziki: Yogurt Sauce (Greek yogurt and cucumber sauce)
Low fat plain or greek yogurt as much as you need
1/2 medium cucumber grated
2 pinch of salt
1 teaspoon lemon juice
dried mint to taste

Berry french toast

1 slice of bread per person
1 egg
sweetner
cinnamon

beat egg with sweetner and cinnamon (to your own taste)
dip bread in eggy mix on both sides, fry in fry light until golden brown.
top with teaspoon honey and defrosted frozen berries of your choice.
I have also been experimenting and have done caramalised apple topping too, 1 apple per person sliced and lightly cooked in fry light, add sweetner and honey and few sultanas.
Your meant to syn cooked apple, but as i am using 1 apple, i could eat that raw.
so 2 syns for bread ( if nimble) 3 if normal loaf) honey 1syn
sultanas 1/2syn

Sweet Potato and Quorn loaf - From the Quorn Kitchen cookbook

125g Quorn mince
70g bulgur wheat ( only i didnt have any so used couscous)
100g carrots, grated
1 small onion, finely chopped
100g sweet potato, grated
2 cloves garlic, crushed
1 1/2tsp marmite ( put it in, even if you dont like marmite - hubby hates Marmite, but never noticed)
70ml veg stock
1 egg, beaten
1 1/2 tsp fresh thyme
Pepper
1 sprig of rosemary

1) pre heat oven to 200c
2) cook bulgar wheat/couscous according to packet
3) gently fry the grated veg and garlic in frylight fr 3 mins
4) disolve marmite into veg stock
5) Put quorn mince in a bowl add the fried veg, cooked bulgar wheat/couscous, stock mixture, egg, thyme, pepper and mix well
6) line a 900g loaf tin with greasprof paper, place the rosemary sprig in the bottom and spoon mixture in to tin and press down
7)cover with tin foil and bake for 30-40 mins remove foil for last 5 mins

Lentil roast

Lentil roast recipe Made 1 loaf tin - had half each!

125g red lentils
500ml veg stock
1 bay leaf
56g full fat strong chedder, grated ( HEA each)
1 leek, chopped
60g mushrooms chopped
2 sliced of nimble, blitzed to crumbs (2syns each)
1tbsp fresh chopped parsley
1/2 tbsp lemon juice
1 egg
salt and pepper

1)Put lentils in pan with stock and bay leaf and cover and simmer until soft and all water has been absorbed.
2)With fry light gently soften the leek and mushroom
3) line a loaf tin and spray with frylight
4) in a bowl mix together the bread cumbs, leeks and mushrooms, lentils, cheese salt and pepper, egg and lemon juice and parsley.
5) tip in to loaf tin and smooth down, cover with foil and put in a pre heated oven at 190c for 45mins to 1hr, ( keep checking it, and remove foil for 5 mins at end to crisp up the top)

so HEA and 2 syns each

Vegetable and nut roast

Serves 6 11.5syns per portion ( i used 6 syns as a HEB for some of the nuts) and i also didnt have any bread crumbs so didnt use those either! reducing the syns more.
( this is out of the new xmas book)

2 onions, chopped
6 cloves garlic, crushed
2 tsp of each of the following ground ginger, ground cumin, ground cinnamon and paprika
2 TBSP passata
1 medium potato, grated
2 carrots, grated
312g cauliflower, grated
170g mixed chopped nuts
1 TBSP each of chives and parsley
100g breadcrumbs
2 eggs, beaten
Pre heated oven 190c

soften onion and garlic in frylight, add spices and fry 1 minute, add passata, potato, carrots, cauliflower and cook for 3 -4 mins. Remove from heat and stir in nuts, herbs, breadcrumbs, and eggs and mix well.
spoon in to a loaf tin and pack down.
cover with foil and cook for 1 hour, remove foil and cook for further 15 mins to brown up

I halved the recipe from the book and used
2 eggs
28g self raising flour
28g sugar
7g cocoa

beat eggs and sugar till frothy and sift in the flour and cocoa and fold in.
pour into a lined ( with better paper than i had - and fry light too if i were you) swiss roll tin
bake for 10 mins at 200c

filling
i used,
1/2 tub Quark,
100g(ish - i just tipped some in!) fromage frais
1 sachet of white chocolate options
sweetner
frozen and defrosted cherries

mix quark, fromage frais, sweetner and chocolate together,

spread over the cooled cake mix, and put cherries in and roll up.

serves 4 3syns

I also made the same recipe and put it into a cake tin instead. I used a options orange flavour sachet mixed with the quark and sweetner to make a 'icing' and decorated with orange segments.

Prawn fish cakes

I have made 2 types of prawn cakes

Recipe one
prawn fishcakes
serves 4
1/2 bunch spring onions
1 garlic clove finely chopped
1 red chilli deseeded and finely chopped
large handful of corriander, chopped
400g frozen raw king prawns, defrosted
1 tbsp cornflour
1 egg
fry light

Stirfry veggies of your choice
noodles

Method
1) place spring onions, garlic, chilli, corriander in food processor and blitz, add prawns, cornflour and egg and blitz again. place in fridge for 20 mins
2) Shape into 24 cakes and in batches fry in fry light until golden brown and cooked, keep warm on plate untill all done.

serve with stir fry

1syn all plans ( use HEB for prawns on a green day)
Noodles will have to be synned on RED day

Recipe 2

Prawn, chilli and ginger cakes
Makes 12 1 syn each EE RED ( and GREEN if you use the prawns as HEB)
113g bread
225g raw king prawns
1 red chilli, deseeded and finely chopped
2.5cm root ginger, chopped
1 TBSP corriander
1 egg
salt and pepper
fry light

Place the bread in a bowl and cover with water and soak for 10seconds. then squeeze out excess water.
Place bread, prawns, chilli, ginger, corrinader, egg and seasoning in to food processor and blitz. ( it does look like gloopy bluish mush!!)
heat frylight in frying pan and dollop in spoonfuls and fry for 2-3 mins each side until golden on each side (the prawns will have gone pink too)

Spaghetti Carbonarra

cooked spaghetti
Quorn ham/quorn bacon or HEB for real bacon or free bacon if EE(cooked already)
Sauce is ( for 2) 2 eggs and 1/2 tub Quark, salt and pepper. whisk together.
When spaghetti is cooked, return to pan and mix in sauce and bacon, keep stiring until the egg in the sauce just starts to set. dont over do it else it becomes really dry.
sprinkle with cheese HEA

use either cooked chicken breast, cut in to pieces or quorn pieces

for the Sauce
1 onion, chopped
3 cloves garlic, crushed
1/2tsp turmeric
1 Tbsp tikka masala powder
4 Tbsp passata
150ml veg or chicken stock
100g low fat fromage frais

soften onion and garlic in frylight, add spices and gently fry for 1 minute.
add passata and stock
add chicken or quorn and simmer until sauce reduces a little (depends how thick/runny you like your sauce)
remove from heat and stir in fromage frais and serve.
With rice for GREEN and EE.

Aloo Gobi serves 4 FREE on green/EE

2 onions - chopped
2tsp garlic granules
2tsp ground ginger
2tbsp mild curry powder
500g potatoes, peeled and chopped into bite sized pieces
300g cauliflower florettes
1 red pepper - cut into bite sized pieces
300g frozen peas
500ml passata
200ml water
1tsp sweetner

1) soften onions in fry light, add garlic granules, ginger, curry powder and fry for 1 min
2) add potaotes, cauliflower, red pepper and peas and fry for 1 min.
3) stir in passata and water and sweetner and bring to boil. cover and simmer for 15 - 20 mins until veg is tender stirring occasionlly.
serve with rice

Sweet and sour sauce

150ml veg stock ( i use 1/2 a oxo cube)
1tbsp light soy sauce
2tbsp dark soy sauce
2tbsp chinese rice vinegar or cider vinegar
1tbsp sweetner
2tbsp passata
2tsp cornflour blended with tsp of water ( 2syns)

put all ingredients EXCEPT cornflour in a saucepan and gently heat, bring to simmer and let reduce a little, add in cornflour mix and stir and use for your stirfry.
2 syns for whole recipe.

Spicy bean and sausage stew

serves 4
8 sausages (low fat, or quorn - depending on day)
4 rashers bacon ( or quorn bacon for veggies)
1 onion, chopped
2 cloves garlic, crushed
1 red chilli chopped ( or dried chilli flakes) add to your own taste!
1 tbsp sweetner
2 x tinned tomatoes
2 x cannellini beans
1 x kidney beans
small bunch parsley
salt and pepper.
veg stock cube

Cook sausages and bacon ( i use my george foreman) but what ever method you like. when cooked cut each sausage into 4 and chop the bacon in to pieces.
soften onion and garlic in frylight, add chilli, and sweetner and veg stock cube. Add tomatoes, beans, 300ml water, sausage pieces and bacon and cover and simmer for 20 mins on med heat.
season and add chopped parsley.

I also did this in the slowcooker and added celery and carrots chopped up too. I softened the onions first and didnt cook the quorn sausages ( did it just with quorn) and chucked it all in the slow cooker and put on LOW for 6hrs. worked really well

FREE on GREEN when using Quorn
EE just need to syn whatever sausages you use.
Would work out quite high for RED - although if you reduce the beans, you could use it 1/2 and 1/2 for the 2 types of beans for HEB
