Gym Addict!!!
Hi

having got a hand blender for Xmas I've been having hours of fun creating soups, however they have all only been suitable for green days

I have searched the forms and search bar and i am really struggling!

does anyone have soup recipes that would be free on a red day??

Hi, i do a gorgeous tomato soup
1 carrot
1 piece celary
1 red onion
3 tins tomatoes
1 pint veg stock
basil
to make it creamy i add a blob of l/f philly for a couple of syns, does 4 portions so makes the soup 0.5 syns!

Push it through a sieve when its blended, it should catch any seeds, but if you give it a really good blitz these should be minimal.

If you are really worried use passata in a carton which is pre-sieved and wonr have any seeds.

i made a gorgeous soup for a extra easy day (but could be for a red day if you class the potato as a healthy extra).

bought an unsmoked ham, cut off all the fat and soak overnight (to remove the salt). discard water.

then cook in boiling water as per instructions on packet. mine wasnt huge so 50 mins. once cooked remove ham and add leeks, carrots and potatoes and some of the ham cut into pieces.

it is really tasty - no need to blend.
just realised i should of added red lentils (i made this for lunch today) which makes it better suited as a extra easy day.

tonight, having ham, egg, chips and veg for tea.

thanks jojo...

one question, do you get seeds in the soup??

Im really funny about pips and seeds in food and when i mentioned this my mum pointed out there would be seeds in tinned toms?

Kate

how about using fresh tomatoes??

just put them into a bowl of hot water, which will make the skin easy to peel off, and the remove all seeds and chop up. You need to make sure the tomatoes are nice and ripe though for a lovely flavour.

There are some soup recipes on my blog:

Rich Onion Soup
Syns per serving: Syn Free on all plans

A real winter warmer! Slow cooking the onions gives a deep sweetness to the flavour that blends wonderfully with the savoury beef stock.

Ingredients:
600g/1lb 6oz larges onions, peeled
2 garlic cloves, peeled
Fry light for spraying
a few sprigs of thyme
1.5 ltres/ 2 1/2 pints beef stock made from bovril
1tbsp artificial sweetener
Salt and freshly ground black pepper
to serve - very low fat fromage frais

Method:
Halve the onions and slice them very thinly. Finely slice the garlic. Spray a non-stick saucepan with fry light and place over a medium heat. Add the onions and garlic, stir and cook for 6-8 minutes before turning the heat to low. Allow to cool gently for about 35-40 minutes, stirring occasionally until the onions are lightly browned. Add the thyme sprigs and stir and cook for 2-3 minutes.
Pour in the beef stock and bring to the boil. Cover, reduce the heat to low and simmer gently for 40-45 minutes, stirring occasionally. Add the sweetener and season well.
To serve, ladle the soup into warmed bowls and stir in a spoonful of the fromage frais.

Roasted Yellow Pepper Soup
Syns per serving: Syn Free on all plans

Remove from the oven and carefully peel the skin off the peppers and discard. Place the peeled peppers in a food processor with the tomatoes. Squeeze the garlic from their skins into the processor with the soy sauce and chopped basil leaves. Add 300ml/12fl oz hot water and process until smooth.
Transfer the mixture to a saucepan and place over a meduim heat. Bring to the boil, remove from the heat and season well before serving, ladled into warmed soup pleates or bowls and garnished with basil leaves.

Chinese chicken soup

1 large cooked chicken breast grated
few Spring onion very finely chopped
1 garlic clove grated
1cm of ginger grated
chicken oxo/chicken bovril
soy sauce
1 egg
1 or 1.5 pints water

all measurements are guestimates as I never really weight anything.......

Stirfry in frylight chopped spring onions, garlic & ginger until soft then add about a pint or so of water, add chicken oxo or chicken bovril, once it comes to boil, turn down heat and add grated chicken. turn down to a simmer add soy sauce to taste, add beaten egg, stirring all the time. The egg makes it look a bit 'stringy' but it honestly tastes delicious. This is syn free on red day, but you could also add a tin of creamed sweetcorn on EE or weigh the chicken as a HEB on a green day.

Potatoes can only be counted as healthy extras if you eat the skin. It's because of the fibre content within the skin. So if you're going to count them as a heb, don't peel them.

Can't wait to try the chicken and veg one!
Stacey you are the soup Queen :p

Just made the tomato soup. Omitted the celery(as didn't have any in) so doubled up carrots and chucked in 1/4 tspn of cayenne pepper for a kick.... Its lovely :)
