What is your number 1 favourite meal

When looking for inspiration for recipes, there are so many I sometimes feel a little overwhelmed.

I thought if I started a thread asking people to state their number 1 fave recipe (with ingredients, method if possible) it might help me and others.

    Thanks

I'll start. My favourite is Turkey, bacon and thyme hotpot.

2 leeks 9oz/255g smoked bacon chopped
1lb/454g turkey breast cut into pieces
    thyme
    7oz/198g mushrooms sliced
    1/2pt/284ml chicken stock
1 level tbsp vegetable gravy granules

Cook bacon and leeks in Frylite for 5 minutes. Add turkey, thyme and mushrooms and cook for a further 5 minutes. Add stock and bring to the boil. Stir in the gravy granules, cover and cook gently for 5-10 minutes. Serve with new potatoes and lots of veggies!!

    Just a simple chicken curry.

I fry onion in fry light and add chopped chicken and garam masala. Once the chicken is sealed i then i add mushrooms and peppers along with a tin of chopped tomato's and some chicken stock. Simmer for 20 minutes.

Seriously i love this and it's completely FREE with boiled rice on EE.

I have lots of favourite 'meals' that I do but a favourite VERY SIMPLE and easy dessert is the quicky cheescake:

quark with 2 white choc options mixed into it - 2 alpen light bars slightly warmed and mashed into a small dish and spread the quark mixture over the top - to me this is JUST LIKE a new york style cheesecake and is ONLY 10 syns for the whole cheesecake or just 4 syns if you use the alpen lights as a heb.

Half of course is 2 syns or 5 syns.

    Lovely.
Week 1 - 1.5lbs off (disappointed) - got over it
    Week 2 - 4lb's off (happy bunny) & SOTW
    Week 3 - 0.5lb's ON ! Not happy.
    Week 4 - 3.5lb's off (happy bunny) - total 8.5lb's loss.
    Week 5 - 1lb off (expected more) - total 9.5lb's loss.
    Week 6 - 0.5lb's off - expected - lucky to get that - 10lb's loss.
    Week 7 - 0.5lb's off - was expecting more but it's a loss ! - 10.5lb's loss altogether.
Week 8 - STS - by the skin of my teeth - still 10.5lb's loss. PHEW !!

I've only been on sw for 5 days and have searched the recipes on here for ideas.
Definitely for me I would agree with the warmed up alpen bars.
I also loved the scotch egg recipe that has been posted, made it today and they were lovely.

Definitely the quickie cheesecake that time2bslim mentioned...

There are quite a few things we have every week but the cheesecake is by far the best Comfort Food we've encountered that tastes lush! ... instead of white choc options you can put any flavour in and use as a topping.. particularly with the quark we get in Asda as that one seems more 'creamy' .. the one from Tesco is definitely better for the cheesecakes we think

I make a lovely easy chicken curry - fry small chunks of chicken in frylight, add some turmeric ( just what ever you think) then add some Schwartz cajun seasoning, fry for a little longer, add onions & crushed garlic & then add a tin of tomatoes & simmer for about 10 mins - very quick & easy & just serve with rice, you could even add veg to it as well.

Another I make is Chicken in passata - fry small chunks of chicken in frylight, add small sticks of carrot, chopped up orange pepper & spring onions, fry for a little longer then add chopped onion & crushed garlic, fry until onions are cooked & then add passata, oregano, basil, bay leaves & a little crushed chill & simmer for a little while & serve with pasta.

Oh and another which is very simple:

Salmon fillets - 1 per person, put into a foil parcel with a couple of slices of lemon, serve with baby potatoes & also roasted veg done in olive oil frylight - I usually do 3 different peppers, red onions, baby parsnips, carrots, cherry tomatoes, garlic, rosemary & leek.

My favourite dish is probably Quorn Thai curry. It is syn free - just 1 HEXB.

In a frying pan, make a paste from
    fry light
    chilli pepper
root (or from a tube) ginger
    garlic
    lime juice
    veg oxo cube
    half tin of passata

    add
    quorn pieces
    bell pepper
    mushrooms
    green beans
    anything you fancy

    stir in
    EL philadelphia
    coconut essence

If you have another spare HEXB, add toasted flaked almonds

At the moment I'm loving the SW egg fried rice

    113g/4oz dried rice
    Fry Light, for spraying
    1 onion, finely chopped
    57g/2oz mushrooms, chopped
    2 garlic cloves, crushed
    57g/2oz frozen peas
1 tbsp Worcestershire sauce or soy sauce
    2 eggs, beaten

    1. Cook the rice according to the packet instructions.
    2. Meanwhile, spray a large frying pan with Fry Light and cook the onion, mushrooms and garlic for 5 minutes. Add the cooked rice, peas and Worcestershire or soy sauce.
    3. Pour the eggs over the mixture and cook over a low heat stirring occasionally for 5 minutes or until the egg has set. Serve with a fresh salad or Free vegetables of your choice.

I did this last night and put some strips of bacon in it and it was gorgeous! I'm going to try it in the week and put some prawns in instead. Everyone in the house couldn't get enough. What I normally do is make a big batch of the plain egg fried rice and keep it in a big tupperware box in the fridge and then when I fancy some for lunch or with my dinner I grab a portion to reheat and add whatever I fancy to it. Only problem is my other half keeps sneaking some out of the fridge so there's never any left when I want it lol

Just found a yummy recipe for savoury cheesecake.... I have not tried it yet but I am going to next weekend.

    Recipe:

2 tubs of EL soft cheese

    2 eggs

    3 cloves of garlic

    Jar of chuntney

    250 grams of cheese

Put everything in a bowl and blitz together.. (1tbsp chuntney) then place in a spring bottom cake tin and bake in a pre heated oven gas mark 7 sorry I don't know the other settings.. for 45 mins let cool and then serve with melba toast..
