    Goal Date: 2012 (for my 40th)
    Hiya I thought I would add this new thread to go alongside my mains & desserts. I will post my recipes as I go along and update the contents as I go:-

    Houmous
    (Special) Potato Salad
    Coleslaw
    'Fry-up' Breakfast Salad
    Pasta & Smoked Salmon Salad
    All Day Breakfast Salad

    02/01/11 start again!! Have already lost over 5 stone!! BMI start = 28.5 2011
    BMI start for 2012 = 28.1, healthy BMI = 25.0 (10st 10lb)
    01/01/12 = too much wagon falling
    12st 1lb = 28.1 BMI
    Jan - lost 7lb (BMI = 27.0)
    Feb - gained 5lb (BMI = 27.8)
    March - gained 1lb (BMI = 28)
    Come on girl - focus!!!
    April - lost 3lb (BMI = 27.5)

    HOUMOUS ( SYN free - green or EE)

    INGREDIENTS

    1 tin chick peas , drain liquid into a cup as you will need some
    1 lemon, squeezed
    1 Large Clove Garlic
    Salt
    Smoked Paprika
    Garlic Powder
    Frylight

    METHOD

    Put chickpeas in a food processor with the garlic and a little of the chickpea liquid and whizz on high power until smooth. Add more liquid if too thick. Keep scraping the sides of the bowl down and re-whizz where needed

    Add the juice of 1 lemon, a shake of smoked paprika, salt and a shake of garlic powder.

    Whizz again

    Taste and season as you prefer using additional salt, paprika or garlic powder

    It really is down to taste.

    Then add a few sprays of Frylight and whizz again.

    Refrigerate - it tastes better- also I found it was even better the next day
    Yum

    Serve with sliced red,orange and yellow peppers, cucumber and carrot batons

    (SPECIAL) POTATO SALAD

    Ingredients

    Approx 1 kilo new potatoes, washed and cut into small pieces
    4 Hard Boiled Eggs, roughly chopped
    3 Spring Onions, sliced
    1 Red Pepper, chopped
    5 Radishes, chopped
    5-6 Tblsp Extra Light Salad Cream (1 SYN per Tblsp)
    1 tsp American Mustard (1 SYN)

    Boil potatoes (in salted or unsalted water). Leave to cool

    To make hardboiled eggs - pour boiling water into a saucepan. Carefully lower eggs (using a slotted spoon) into water - if done slowly shell should stay intact . Bring back to boil and time for 8 minutes. Remove and cool with cold water and peel. Roughly chop. Leave to cool

    Mix all prepared veggies and eggs.

    Mix together salad cream and mustard and mix into potato salad.

    Enjoy

    COLESLAW (3 SYNS TOTAL)

    Ingredients
    2 Large or 3 Medium Carrots, peeled and top and tailed
    1/4 of a White Cabbage

    4 Tblsp Hellmans Lighter than Light (2 SYNS)
    1 Tblsp Heinz Extra Light Salad Cream (1 SYN)
    1 Tblsp freshly squeezed lemon juice
    2 Tblsp of either 0% Fat Greek Yogurt or Natural Fromage Frais (fat free) or Fat Free Yogurt
    Salt & Pepper

    In a food processor coarsely grate the carrot & cabbage

    Mix together the remaining ingredients and spoon over grated carrot and cabbage

    Mix well and serve

    would this work without radishes and red pepper hope it tastes just as nice and i dont like mustard so i can count that syn out lol

    I can never find smoked paprika We don't have a Tesco or Asda but have the other big supermarkets. Nearest thing I have is regular paprika or M&S smoked paprika with sweet red pepper and thyme blend. Will try the latter in the humous, thanks. Nom.

    'FRY-UP' BREAKFAST SALAD (SYN free)


    Ingredients
    1 Pack of Joes Sausages (Syn Free)
    Frylight
    1 Pack of Healthy Eating Bacon ( all visible fat removed) ( SYN free)
    1/2 Punnet Cherry Tomatoes ( or cherry plum tomatoes, sliced in half
    4 Hard Boiled Eggs, sliced
    1/2 Cucumber , thickly sliced and then quartered
    1/2 Packet if your favourite Salad Leaves


    Grill Sausages and allow to cool.

    Spray Frylight into a frying pan, heat and cook bacon. Allow to cool

    (to make perfect hard boiled eggs:- Boil kettle & pour water into saucepan and place on hob. Make sure water is boiling, then carefully lower each egg into the water using a slotted spoon. Bring back to the boil and time 8 minutes. Take off heat and turn cold tap on so it cools down eggs. Peel. )

    In a large bowl place salad leaves, cut up cucumber & sliced tomatoes.

    Slice sausages and cut bacon into small pieces and add to salad.

    Slice egg and add

    Toss salad & use your favourite dressing
