syn free curry sauce

1 onion, chopped
2 garlic cloves, crushed
1 tsp ground ginger
1/2 - 1 tbsp curry powder
400g tin chopped tomatoes
2 floz veg stock
2 tbsp sweetner
yogurt 2-4 tbsp

fry onion, ginger and garlic in fry light for 2 minutes, add the curry powder, stir in the toms, stock and sweetner. simmer for 15 mins. take off heat stir in yogurt and blend.

serve with sw chips and mushy peas

I got this recipe from a sw magazine whne i first did sw back in 2005, i usually add a lot more yogurt than it says. i have made it a few times for taster sessions and everyone always asks for the recipe
 
Slimming world chips

i always leave the skins on mine, i chip the potatoes put them on a plate spray with a little fry light and microwave them for about 10 mins let them stand a few mins , put on a oven tray i use a pizza tray with the holes in, spray the chips with more fry light then salt n pepper, then put in a pre-heated oven on highest setting my goes to gas mark 10 for about 15-20 mins until golden, turning half way through.

a few flavourings i also use:
a veg oxo crumbled and sprinkled over the last 5 mins,
natural yog mixed with paprika,
natural yog mixed with a veg oxo and salt n pepper,
garlic salt,
garlic granules and mixed herbs,
maggi liquid seasoning
 
egg fried rice

cooked rice (it works best if it is cooked they day before and left in fridge overnight to dry out, or you could place it on an oven tray and place in oven for 5 mins to dry out a bit)
peas and sweetcorn
3 eggs
soy sauce
salt and pepper

lightly scramble the eggs just for 2 mins so they are still 'wet', set to one side
stir fry the cooked rice in frylight for 5 mins, add 1-2 tbsp of soy sauce so that all the rice is coloured brown, add the peas and sweetcorn stir fry for a few mins then add the egg and seasoning and stir fry for a further 2-3 minutes
 
for anyone who hasnt tried the sw doner meat or sw kfc i've tried them and are both very nice here's the recipes i picked up of here:

doner meat
Ingredients:
1 teaspoon plain flour
1 teaspoon dried oregano
1/2 teaspoon dried Italian herbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
500g/1.1 lb lamb mince

Method:
Preheat oven to gas mark 4/180C/350F

In a large bowl, combine the plain flour, dried oregano, dried Italian herbs, garlic powder, onion powder, cayenne pepper, salt and black pepper.

Add the lamb mince and mix thoroughly for 2-3 minutes. Take out all of your aggression on the kebab mixture, punching and kneading until no air pockets remain and the kebab meat is extremely smooth.

Shape the seasoned mince into a loaf and place on a baking tray.

Bake in the middle shelf of the oven for 1 hour 20 minutes, turning the loaf half way through the cooking time to ensure even browning.

Once cooked, remove from the oven and cover with foil. Allow to rest for 10 minutes.

Slice the donor kebab as thinly as possible and serve with pitta, salad and sauces!!!


Syn Free KFC

10 x Chicken Drummers or 4 Chicken Breasts
1 x Tub Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed (optional if you dont like garlic)
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional)
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbes

Method
Place chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.

Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.

Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.

Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.
 
EE Bolognese

heres what i use to make a huge pan of bolognese, with plenty of super free veg hidden in it :) i wont bother with the method as we all know how to make bolognese. don't we? lol

1 pack of quorn mince
1 pack of extra lean mince
1 tinned of baked beans
2 carrots, grate one and dice the other
1 courgette, diced
250g mushrooms, sliced
2 onions chopped
1 red pepper, chopped
3-4 garlic cloves
a couple of handfuls of diced bns
veg oxos
maggi liquid seasoning
2 tins of toms
1 pack of pasatta
water
1 tsp sweetner
salt and pepper
oregano
splash of balsamic vinegar

think i've remembered everything! :)

are you using breast or drumsticks. i did it with drumsticks it was nice but been told its much nicer with the breasts, i also did it with quorn pieces as i had loads of paste and breadcrumbs left over - my OH prefered the quorn and he is a big meat eater - i tricked him he though it was chicken! ha ha ;)

aww they werent that nice, they were ok but tasted just like that homepride southern fried chicken stuff, a bit weird :/ oh liked them but next time i think i wil try the actual kfc recipe and just miss out the mixed spice! do u know if u have to use a blender to mix the crumbs cos i dont have one lol xxxx

I use a blender but u could do it by hand I guess. Why would u miss out mixed spice? I think it's that & bovril that give it the kfc taste. I bought the secret takeaway book that this recipe & the kebab one is from, can't wait to try the others!!! :)

Sure will toots lol!! When I try them if they're nice I'll post them up! There is a lamb kofta kebab sounds yum too & lots of other bits and pieces, better get shopping for me ingredients :) x

awww my blender just broke :( going to have to buy one as i make all my own baby food for my son he won't eat the jars, think i will buy a decent one maybe a kenwood chef.

the kfc i though it was ok but not great i won't be rushing to make it again, prefered the doner kebab even though i don't really like the takeaway version. any ideas what seasoning is used on the chicken kebabs in takeaways? tried several times to make it but never tastes right and chicken always seems dry. x
 
hiya thanks for the tip! i have some ideas for kebabs, not tried any yet tho so i cant give u any advice on which are nice!

one:

2 lbs cubed chicken breast
3 tablespoons lemon juice
1 tablespoon olive oil
2 cloves garlic, finely chopped
1/4 teaspoon cumin
1/2 teaspoon pepper
1/8 teaspoon cayenne

In a medium bowl, combine all ingredients. Allow chicken to marinate for 2-24 hours, covered in the refrigerator.

two:

Olive Oil
1 Lemon Lemon Juice
2 Onions -- crushed
2 Bay Leaves
2 Teaspoons Dried Rigani
2 Large Tomatoes -- crushed
Salt And Pepper -- to taste

Marinate choice of meats and vegetables 4-12 hours, the longer the better, grill on skewers or under broiler.


three:

Olive Oil
2 Large Onions -- crush
1 Teaspoon Cinnamon
Salt And Pepper -- to taste


Marinate choice of meats and vegetables 4-12 hours, the longer the better, grill on skewers or under broiler.




1/2 Cup Yogurt
1 Large Onion -- crushed

chicken thighs can be juicier, but more messy.
