Extra Easy - Tomato Soup

Hi there

I have got some tomato in fridge and also a tin of chopped tomatoes and I want to make a tomato soup. I am not sure how to do it. I dont have any vegetables, just onions and the stock i hv is beef or chicken! Mmmm dont know what to do? Any ideas? Not got any garlic either. Shopping will get done on wednesday x
 
Have you got ANY veg whatsoever at all, no matter how small the quantity? Carrot? Celery? Got any dried herbs? If so, bung it in.

Chop the onions, toms & any veg up, fry it to soft for 10 min, add a couple of tbsp tomato puree, whatever herbs you've got hanging around (bay leaves, thyme, oregano, basil, thyme, pretty much anything'll do) and a couple of stock cubes, plenty of salt & pepper and leave it to stew. Then blitz it if you want it smooth. Voila. :D
 
I will use a few tomatoes, with fry light, then onions, i hv frozen mushrooms and dried herbs and parsley. will i just fry until it is soft and then put all contents in blender to smooth it down?? x
 
I'd leave it to stew for a while in plenty of stock. 30-40 mins maybe, get the tomatoes to break down and thicken the soup up. Especially if you're having to make it with tinned ones as well as the fresh, or it will stay very runny. Put plenty of onion in so you've got that to help thicken it as well.

Not sure about mushrooms in tomato soup but the dried herbs/parsley will be fine. Plenty of salt & pepper. Maybe a splash of Worcestershire sauce? Or if it's too sharp add a pinch of sugar.

Blitz or not-blitz, its up to you how smooth you want it. :)
 
Here is my recipe for tomato soup...............


Pete’s Superior Tomato Soup


Serves 2

Ingredients


400g of chopped tomatoes
300mL stock using a Knorr vegetable stock pot & hot water
1 Tsp tomato puree
1 small onion, chopped
1 small carrot, chopped
1 piece of celery, chopped
1 tsp “very lazy” garlic
1 tsp “Worcester sauce”

Method

Cut up the onion and put into a saucepan after spraying with Fry Light and cook until transparent. Cut up the carrot & Celery into small pieces and add to the pan, add the vegetable stock and garlic mix for 2 mins, stirring all the time.

Add the tomatoes and cook for a few minutes and add the stock and a few drops of Worcester sauce.

Bring to a boil then reduce heat and simmer for 20 mins then remove from the heat and using a liquidiser reduce to liquid. Add Seasoning to taste. Return to the heat for a further 10 mins.

You can also allow it to cool and reheated later, as this gives a better fuller flavour.
