I cooked this from the SW One-Pot Wonders book last week, and it was absolutely delicious, and so simple!

Chicken Jamboree

Free on extra easy & original, and 6 syns on green per serving.

8 large skinless chicken thighs, bone in (I used boneless)
Salt and freshly ground black pepper
8 - 12 garlic cloves, unpeeled
2 onions, peeled, halved and sliced
2 carrots, peeled and sliced
198g/7oz button mushrooms
624ml/22fl.oz chicken stock
1 bay leaf
1 tbsp finely chopped thyme
6 peppercorns
finely chopped parsley, to garnish

1. Preheat the oven to 190*C/Gas 5. Season the chicken and place in a heavy-based casserole dish with the garlic, onions, carrots, mushrooms, stock, bay leaf, thyme and peppercorns.

2. Bring to the boil over a high heat, season and then place in the oven and cook for 35 - 40 minutes or until the chicken is cooked through. Discard the garlic and bay leaf, and garnish with chopped parsely before serving.

I made this for dinner yesterday evening, and for the first time left the bones in the skinless thighs, as I had bought them and skinned them myself, and was going to debone them, and couldn't be bothered, and I have to say, and it was much more flavoursome :drool:

I cut down the amount of stock because I did it in the slow cooker and it was indeed delicious. My OH ate the garlic cloves as well so he'll stink tomorrow but he really enjoyed it. This will definately become one of our regular meals, thank you. xx

Glad you enjoyed it, and hubby will certainly not be at risk from being attacked by a vampire!

mmm that sounds really good, but hubby doesn't do bones, so will have to sacrifice the bit of flavour for happiness :))

how far did you reduce it for slow cooker

I only put 400ml of stock in and that was plenty, I could probably have got away with 300ml.

Co-incidentally we are having it for dinner tomorrow, with mashed potato and cabbage :drool:

Sorry to be a pain.. I just bought a slow cooker I've never used one before.. but I want to start..
What heat setting and how long did you leave it in the slow cooker?

If you use the low setting it'll take at least 8hours the high setting about 4
I usually put mine on when i go to work to come home to a cooked meal
