    Smoked Haddock

I have bought some smoked haddock from Tesco. It's Tesco's extra special frozen smoked haddock. Does anyone have any suggestions on how I could cook it? I would usually have it with some sort of sauce but need something that's sw friendly

The place to look would be the recipe sub-forum or try www.bbcgoodfood.com for inspiration.

Depends which plan you are on. Here are some suggestions:

    Smoked Haddock pie
Fry chopped onion and mushrooms in frylight
Add fish (cut into cubes), sat & pepper, a little bit of milk and bring to boil (this gives it a creamy taste. Add some peas or sweetcorn and cook until iquid is reduced.
Put in an oven proof dish top with mashed potato or potato/sweded/carrot mash or slices of potatoes (par boiled in salted water).
Cook in oven 180 degrees for 20-30 minutes until top golden brown. A few minutes before serving sprinkle with grated cheese. Serve hot with plenty of boiled mixed vegetables (carrot, broccoli, cauliflower) or a salad

    Smoked Haddock Kedgiree
Fry chopped onion and mushroom in fry light. Add fish (cubed), rice and add some water, salt & pepper and cook until rice is done (add extra water if needed), add a handful of peas. Serve hot, sprinkled with chopped parsley/chive or coriander.

    Creamy Smoked Haddock casserole
Fry chopped onion in frylight, add fish (cubed), salt & pepper, some milk bring to boil, then reduce and simmer until fish cooked and liquid reduced. Add mushrooms, peas, sweetcorn, sliced carrots (optional), sprinkle with dried dill weed or chopped parsely (optional). When sauce has reduced serve, with boiled rice/mashed potatoes/boiled potato/jacket potato/ mixed boiled vegetables.

I hav ealso heard that people cook the fish in either little water, or milk and serve it with a poached egg.

Hope you enjoy. Let me know which one you like best.
