SW double sausage and egg mcmuffin

okay so someone made these the other day when i went round for lunch... they were delicious..

youll need..
low fat pork mince
salt and pepper
1 wholemeal muffin (healthy b choice)
1 egg
2 slices of low fat burger cheese (healthy a choice)
frylight
egg rings.

squish together pork mince and salt and pepper and use the egg ring to push the mince into to make the sausage patties

fry them off using frylight, drain excess fat

toast the muffin under the grill

use egg ring to make a fried egg using frylight

layer it up in the toasted bun with your cheese in between...

mmm yummy

Pete’s Egg Muffin
Serves 1

Ingredients


1tsp basil
1 Sainsbury’s reduced fat British Pork sausage 50% less fat (3syns each) (ff)
1 x 60g Wholemeal Muffin (1Heb)
Sprinkle of garlic salt
Sprinkle of Aromat seasoning

*extra
1 20g Sainsbury’s “lighter” cheese slice (40% less fat) (1Hea) or (2syn per slice)
1 rasher of smoked bacon, cooked until crisp, all fat removed (ff)

Method

Cut the sausage ends off and squeeze the meat into a glass dish, add the spices & seasoning, mix well. Wet your hands and roll the mix into a ball then flatten to look like a “burger”.
Spray a frying pan with Fry Light and cook the burger for 10-15 mins each side or until cooked. Also cook the bacon if used as an extra.
Place an egg ring in a frying pan and cook the egg.
Slice each muffin & toast.
Plate up.

Finished off with an apple, coffee & apple cordial!
 
I wouldn't have thought of using the filling of a sausage, or adding garlic salt but yum yum. I had this the other day as a sandwich and really enjoyed it, can't wait to find wm muffins now.

1 Rasher of smoked bacon, fat removed, cooked until crisp (ff)
1 Egg, scrambled (ff)
2 20g Sainsbury’s “lighter” cheese slice (40% less fat) (1Hea) or (2syn per slice)
Or
Reduced Fat Cheddar, sliced thinly, (1Hea)

1 x 60g Sainsbury’s Wholemeal Muffin (7syns)
Or
1 x 60g Sainsbury’s Wholemeal Bap (1Heb)

Sprinkle of garlic salt
Sprinkle of Aromat seasoning

Method

Break an egg into a dish & whisk with a fork until it’s scrambled, season, place an egg ring in a frying pan and cook the scrambled egg.

Oh my days! Just made these for lunch! Amazballs!!
Does anyone know if you can count wholemeal muffins as healthy extras and if so is it because they don't have enough fibre?

You have to syn them at 7 syns, because they have oil in them & not enough fibre, The wholemeal baps can be 1Heb, they are oil free and more fibre!.................this was discussed in length on another posting.

I bought some of the Sainsburys sausages today, I'm defrosting a herb whole meal bap for supper. I won't have cheese or bacon though, just egg n sausage for supper later :)
 
I shouldn't browse the recipe section when I'm hungry :drool: these are on the list to try. 7 syns for a muffin though? Are there any we can use as a B choice? :)
 
Try a 60g wholemeal Bap 1Heb!
 
I weigh a co op whole meal roll instead of muffins. I may have it again later, well I have to use the sausages up lol ;)
 
Are the baps any good? I find wholemeal rolls a bit dry tbh! Its my birthday next week so I think I'm going to syn the muffin and have this for my bday breakfast! :drool:
 
Well mine are dry because I freeze them,as I hardly eat bread but, I lightly toasted them last night and they refreshed lovely. I'm too tight spend 7 syns on muffin!! Lol
 
Yeah 7 syns is a lot! The white muffins are only 1 syn more. Hardly worth having the wholemeal if you're already spending 7 syns eh! I know it's better for you and all that but you're having a fake mcdonald's why not just have white bread :D
 
I lightly toast 60g wholemeal baps and add the cheese when used first so that it melts into the bap! They are very slightly drier then muffins but they are a Heb! instead of 7 syns......I find them ideal for a breakfast as a change from beans on toast!
