Syn free or low syn cake

When I went to weigh in yesterday there was a syn free sponge cake - it was really nice and is in one of the recipe books but they didn't have the book.

Any idea on the recipe? I would love to try it. I think it could be easily adapted as well.

That's not a lot of information to go on lol. There are lots of cake recipes in this forum if you want to try doing a search :)
 
Hi there!

It was probably the 1/2 syn cake recipe, which is this:
1. Whisk 4 egg whites in a bowl until they reach soft peak stage
2. In another bowl, whisk together 4 egg yolks, 4tbspn sweetener, half tub a quark, 1 tsp baking powder (1/2 syn), 1/2 tsp vanilla extract. Then whisk in half the egg whites.
3. Fold in the remaining egg whites with a metal spoon
4. Tip the mixture into a sandwich tin, lined with baking parchment (2 if you want to make a double cake with filling, or on a tray if you're doing swiss roll style)
5. Bake in oven (180c) until well risen and brown (approx. 20mins). It will sink when you first take it out, dont worry.
6. To make topping/filling- mix other half of quark tub with 1 tbspn of sweetener, as well as vanilla/fromaige frais/orange zest if you'd like.
7. Spread that or use as filling, as required and add fruits of your choice in filling/as topping.

I haven't tried to make this myself yet but intend to try tonight :)

This is gorgeous and it helped me a lot when I last did SW as I have a very sweet tooth. I have to say that I didnt like the quark topping (even with heaps of sweetner) so I left it off and just ate the cake as is. Most people say it tastes better cold from the fridge, I agree. It's very handy to have in a little tub when you go out for the day as a snack.
I used to add a sprinkle of sugar on top before baking it, I had to syn this of course but it gives the cake that extra 'real' sweetness and a little bit of crunch on top :eek: OMG I'm making my mouth water...
 
I have made this and if you whisk the egg whites very stiff (like you were making meringue) and fold into the other ingredients you can leave out the baking powder leaving it Syn Free
 
Quark

The quark I have been buying comes in 250g pots, so without appearing to be really dense is it half of this amount you add to the mix? Tia
 
Thanks for that, I will try it as I just like to have a low syn treat - and syn free is even better.

Just made this, super quick recipe and super smells drifting from the kitchen right now, even daughter came down from her bedroom to see what was baking. She wants to put icing on the top tho, lol, No way!!!!

Hi Is this half a syn for the whole cake? I want cake now haha :) Thanks
 
I did this recipe but added 4 tablespoons of chocolate options and made a choc cake mmmmmmm was very nice. Obvi the syn value increases alittle but better then eating a big bar of chocolate :) x
 
I made this today and was pleasantly surprised! It was so delicious and best of all I have no guilt before weigh in tomorrow. :D
 
I love it and mine never tastes eggy.
