Hi
Whenever i use quark in a dish it curdles! Any ideas on how to stop this

Unfortunately this is a problem with quark when heated beyond a certain temperature. When using it for a sauce I remove it from the heat as soon as it is stirred in. Used in something like a fish pie it will separate but does not alter the taste.
