Overnight slowcooker pumpkin porridge

Serves 4
1 x HEB per serve

140g steel cut oats or jumbo rolled oats (I prefer steel cut oats as they keep me fuller for MUCH longer!) - 4 x HEB
4 cups water
1/2 cup (125ml) semi skimmed milk (1/2 HEA, negligible per serve)
1 can pumpkin puree Ocado: Libby's Pumpkin Puree (Product Information)
1/2 tsp cinnamon
1/2 tsp all spice
1/2 tsp ground ginger
1 tsp vanilla extract
1/4 tsp salt

Put everything in a slow cooker and set it to low for 9 hours. In the morning you'll have wonderfully creamy porridge!

To serve, add chopped fruit, part HEA allowance of milk, yogurt, nuts, sweetener, maple syrup etc. Whatever you like!!! I like to add milk, banana and blueberries. The addition of pumpkin more than doubles the quantity and is also a superfree food which is always a good thing!

This keeps well in the fridge so I take my portion and separate the rest in individual portion plastic containers. To reheat, I warm it up in the microwave for one minute on high, stir and add 60ml semi skimmed or soya milk (1/4 HEA) and heat for another minute. Breakfast ready in a flash!

It was yum! And there was so much of it and so filling. I love it when a meal keeps you charged for ages!
 
Oh I'm so sorry, that was meant to be 1/2 cup (I.e. 125ml) I'll edit the recipe now!
 
Thanks, gonna try it this week. I have been trying to buy steel cut oats or pin head oatmeal for ages now and can't find it anywhere. Where do you buy yours?

I don't have steel cut oats so will use ordinary for now. Just on etching, do you need to add milk to serve or is it a bit thick to eat without? I'm such a big coffee drinker that I use my milk allowance in that!!!

Hi Jaylou, it's not too thick when made, especially on the first day. You can definitely skip the milk! I only add a quarter cup (60ml) to my bowl anyway which isn't much. We got a delicious brand of soya milk from costco and its so creamy and delicious, it adds a nice luxurious note to a basic bowl of porridge!
 
Are the cans of pumpkin puree free? I can't find them on syns online
 
Yes they're free. It's literally steamed pumpkin puréed and canned. If you check the ingredients list it says 100% pumpkin.
 
Just wondering if SW class it as a fruit or veg though? can't find any canned pumpkin at all on there to check though
 
Yay!! So glad you enjoyed it. How amazing is it that you get LOTS?! And the best part is that your superfree is incorporated in it!!! It's soooo filling as well, I'm making another batch tonight!
Did you use steel cut oats?
