The Wife's Gammon Broth Recipe

This is a gorgeous recipe given to me by my online Wife & good friend Sheila (Texty_F) :)

I absolutely love it, it's really tasty, filling & quick to make.

Ingredients:
150g Broth Mix (I used Great Scot vegetable broth mix)
Gammon joint (I used Asda smoked gammon joint & put 170g worth in my broth)
3 carrots
2 small onions
A few cubes of swede
1 leek
450g potato
50g macaroni pasta
2 vegetable oxo cubes
Salt & pepper to taste

Method:
Soak the Broth mix overnight in some water.
Cook the gammon as instructed, my gammon joint took 1.5 hours in the oven on gas mark 5 or you can cook it the night before if you prefer.

Chop all the vegetables up into bite size cubes, add to a large pan, add the broth mix & vegetable oxos, cut the gammon up into bite size pieces & add to the pan.
Cover with water.

Cook on a medium light for around 30 minutes stirring occasionally. Then in the last 10 minutes add the macaroni pasta, stirring in well.

After 40 minutes everything should be nice & soft & ready to serve.

How many does this serve? I have asked in texty thread but just in case would you say this is a lunch or tea meal?
