Amazing soup recipe for spicy lovers!
Heya thought id share this super free soup recipe with everyone. I absol love it! I have it 3 times a week at least and it's so so easy to make!! I vary the amounts of the ingredients depending on what I have in the fridge (this makes bout 3 portions for me)
1 turnip (super free)
4 carrots (super free)
3 leeks (super free)
3 red chillies (superfree)
1 stock cube (free) whichever flavour you like
And enough water to cover all the veg in the pot
Chop all the veg and chillies (take seeds out) and pop into big pot. Add the stock cube (it'll dissolve when you put the water in). Pour enough water in to just cover the veg.
Leave to boil until the veg is soft enough to mash. Mash everything in the pot. If you have a blender then pour everything into it and blitz it. If you don't then mashing works really well, just make sure to cut the leeks and chillis very finely!
Serve and enjoy!!
It's very hot!! So if it's too hot, then don't put as much chillis in as I do

Thank you for this! I am trying a lot of soup recipes as I have just got a hand blender. I roast my vegetables first sometimes-- try it! Sprayed with FL and softened in oven, then boiled in stock.
